Peanut Butter Avocado Toast

A nutrient-packed Peanut Butter Avocado Toast is not only a tasty breakfast, brunch or lunch, it's also cruncy and healthy! Creamy avocado and crunchy peanut butter on ciabatta or any other bread like sourdough, homemade no-knead bread is definitely worth the bite!

Ingredients
  

  • 2 slices of bread ciabatta, sour dough, any bread
  • ½ ripe avocado thinly sliced
  • 4 Tbsps peanut butter divided
  • pinch of salt
  • pinch of smoked paprika optional

Instructions
 

  • Toast the bread: Toast the bread in a toaster, on a grill or in the air fryer. If using the air fryer: Use cooking spray to spray the bread slices and air fry for 4 minutes without turning.
  • Add half the peanut butter: Spread half of the peanut butter evenly on the toast.
  • Add the avocado: Scoop the avocado half out of the peel using a spoon. Slice and place it on top of the peanut butter.
  • Melt the peanut butter: Melt the remaining peanut butter in the microwave on high for 30 seconds and pour over the avocado peanut butter toast.
  • Season: Season with a pinch of salt and smoked paprika or black pepper. Enjoy!
