Pumpkin Feta Dip

This easy pumpkin feta dip is gorgeously thick, creamy and a little sweet and savory.

Ingredients
  

  • 200 g 8oz block feta cheese
  • 2 cups roasted pumpkin or 1 canned pumpkin
  • 200 g 8oz Greek yogurt
  • Pinch of salt
  • 1 tablespoon honey
  • Roasted pumpkin seeds
  • Optional: 1 teaspoon extra virgin olive oil for a rich smooth texture and finish.

Instructions
 

  • In a blender or food processor, break the feta up into chunks. 
  • Add the pumpkin, salt, Greek yogurt and honey. Blend into a smooth puree.  Optional: Add a teaspoon of extra virgin olive oil. 
  • Transfer the dip to a serving bowl and garnish with roasted pumkim seeds. 
  • Serve with fresh vegetables, fruit, crackers or bread.

Notes

The texture and consistency of this dip will depend on the appliance. A high powered blender creates a a smooth and creamy dip. A food processor creates a more textured dip. Both are delicious and can be served with a variety of foods!
