Description

Avocado and rice bowl with fried onions and spices to create a tasty rice, topped with sliced avocado and avocado dressing.


Ingredients

Units Scale
  • 1/2 onion (finely chopped)
  • 1 garlic clove (minced)
  • 1 tablespoon tomato paste
  • 1 tablespoon Smell & Taste Spice Paste
  • 1/4 cup white wine
  • 2 tablespoons oil

Veg and Dressing

  • 1 1/2 avocado's
  • 1 cup baby spinach
  • 1/4 cup feta cheese (1 of those blocks from the feta container)
  • 1/2 tsp salt and pepper (or to taste)
  • Parmesan cheese
  • avocado dressing

Instructions

  1. 1 x Recipe Cooked Rice
  2. 1 x Recipe Avocado Salad Dressing
  3. Heat a non stick pan and cook the onions for 8 to 10 minutes on medium. The onion must sweat before you add the garlic. If they start sticking to the pot, lower the heat.
  4. Add the garlic, tomato paste, Smell & Taste spice paste (if using) and the white wine. Add salt and pepper and cook for 5 minutes on simmer.
  5. Add the cooked rice and gently combine using a spatula to spare breaking the rice grain.
  6. Serve with sliced avocado, baby spinach leaves, crumbled feta, parmesan cheese, avocado dressing and seasoning.
