- 4 large roma tomatoes (diced)
- 1 diced onion
- 1 cup or 1 chopped green bell pepper
- 1-2 cups diced cucumber
- 1/3 cup fresh coriander (cilantro) chopped
- 1 chopped medium chili pepper or jalepeno with seeds unless you want less heat then deseed it.
- 1/2 tsp salt or to taste
- 1/2 tsp sprinkle of freshly ground black pepper
- 2 tablespoons freshly squeezed lime juice
Instructions
- In a bowl add the chopped tomatoes, green bell pepper, diced onion, coriander, chili or jalepeno pepper, salt, lime juice and black pepper.
- Combine the ingredients and refrigerate until needed.
