Description

Enjoy these healthy oven roasted sweet potatoes, easy air fryer cooking together with tips and serving suggestions.


Ingredients

Oven Roasted Sweet Potatoes

  • 6 sweet potatoes
  • 1 tbsp olive oil
  • salt and pepper

Air Fryer

  • Potatoes

Topping Ideas

  • herbs and spices ( olive oil or butter)
  • sour cream or yogurt (avocado )
  • Other veggies

Instructions

  1. Heat the oven to 220 Celsius.
  2. Rinse and pat dry the potatoes. You don't have to peel them. Slice or dice and place on a baking tray. Add olive oil and seasoning Use cooking spray for the tray or baking paper for easier clean up. Bake for 40 to 50 minutes or until fork tender.

Air Fryer

  1. Rinse the potatoes and dry then using a kitchen towel. Use a fork to pierce holes into them and air fry on 195 C for 40 minutes or until fork tender.

Notes

Sweet potatoes are rich in fibre, vitamins and minerals. My appreciation for this root vegetable is the amount of energy and how much it stabilizes my blood sugar.

The time that sweet potatoes take to oven roast and air fry is the same. One of the conveniences you might enjoy is that when you cook then in the air fryer, you don't heat the whole kitchen up. 

You get a different crisp on the skin when you use the air fryer as opposed to oven roasting. 

Rinse or wash sweet potatoes before cooking them, since they do grow in the ground. 

Make sure the dry them with a kitchen towel. Dry potatoes will roast and damp potatoes will steam. 

I would suggest always poking potatoes before cooking them. Air fryer or oven, use a knife to pole holes all round the potatoes. In an air fryer, I would say it's to help make sure they don't explode! In the oven, it's a method I grew up on to help the cook tender from the inside. You can also wrap them individually in foil when oven roasting but you'll find the skin will be soft not as crispy as you may want it.
