Tofu Fruit and Vegetable Salad

A wonderful seasonal tofu salad recipe served with fresh vegetables, fruit or both!?

Ingredients
  

  • 1 cup grilled tofu
  • 2 cups steamed broccoli florets
  • baby spinach
  • leafy salad greens
  • 1/2 cup pitted olives
  • 1 cup roasted chickpeas
  • 1/2 thinly sliced red onion
  • cherry tomatoes
  • feta cheese (optional)
  • raspberries (optional)
  • mixed roasted seeds

Instructions
 

  • Make sure the tofu has been rinsed and drained ready to use otherwise see this recipe for instructions on how to prepare tofu.
  • Assemble all the ingredients in a salad bowl and serve with salt, pepper and your choice of salad dressing. Enjoy!
