Tofu Fruit and Vegetable Salad

A wonderful seasonal tofu salad recipe served with fresh vegetables, fruit or both!?

- 1 cup grilled tofu
- 2 cups steamed broccoli florets
- baby spinach
- leafy salad greens
- 1/2 cup pitted olives
- 1 cup roasted chickpeas
- 1/2 thinly sliced red onion
- cherry tomatoes
- feta cheese (optional)
- raspberries (optional)
- mixed roasted seeds

Make sure the tofu has been rinsed and drained ready to use otherwise see this recipe for instructions on how to prepare tofu.
Assemble all the ingredients in a salad bowl and serve with salt, pepper and your choice of salad dressing. Enjoy!
