How To Make A Berry Compote

How to make a quick easy berry compote!

Ingredients
  

  • 2 cups mixed frozen berries (you can also use fresh)
  • 1 cup water
  • 3/4 cup sugar
  • lemon zest and the a squeeze of fresh lemon
  • 1 tsp maizena
  • 1/4 cup room temperature water (or even less water you just want to make a paste)

Instructions
 

  • In a saucepan/small pot add the berries and sugar and bring to a simmer. Leave it to simmer for a few minutes until you see the berries begin to thicken, keep stirring intermittently.
    Add the water, lemon zest and juice.
    Let the mix simmer itself into a nice thick jam like consistency.
    Using a kitchen masher utensil gently press down on the berries to help the process along. If you want a smoother consistency then it let cook about 5 more minutes. You can also use a strainer to keep just the liquid.
    Mix the maizena and the water into a consistency and add it into the berry mix. Simmer another minute or 2 and your compote is ready.
