2cupsmixed frozen berries (you can also use fresh)
1cupwater
3/4cup sugar
lemon zest and the a squeeze of fresh lemon
1tspmaizena
1/4cuproom temperature water (or even less water you just want to make a paste)

Instructions
In a saucepan/small pot add the berries and sugar and bring to a simmer. Leave it to simmer for a few minutes until you see the berries begin to thicken, keep stirring intermittently. Add the water, lemon zest and juice.Let the mix simmer itself into a nice thick jam like consistency. Using a kitchen masher utensil gently press down on the berries to help the process along. If you want a smoother consistency then it let cook about 5 more minutes. You can also use a strainer to keep just the liquid.Mix the maizena and the water into a consistency and add it into the berry mix. Simmer another minute or 2 and your compote is ready.Enjoy!
