Notes

Raw Broccoli Not into raw broccoli florets?
  • Place them into a bowl, pour boiling water over and let them sit for a minute
  • Add the florets to a pot of boiling water and cook for a minute
Here's the catch! Don't let them sit longer or they become mushy and ruin the salad :(  Unless you're prepared to take them out the boiling water and straight into a ice bath.
What's an ice bath? Ice in a bowl, this will help stop the broccoli from overcooking and still maintain its bright green color.
Really? But is all that necessary when you can just enjoy them raw? I would say the intent is no cooking, quick, healthy and delicious!
  • Eat them raw, they're good for you and the salad dressing is so divine you won't even notice!
Broccoli stems save the broccoli stems to include in a vegetable roast or in a homemade stock. You can store them in a sealable freezer bag in the fridge for a day 2, if you're not ready to use them, pop the florets into the freezer for when you need them.
Bell Peppers If you can't find snack peppers (the smaller ones) use 1 medium or one half of the yellow or orange, the taste is not such a bite as the green.
