Spicy Salmon Recipe

This spicy salmon recipe in a lemon and spice sauce is quick, easy, delicious and perfect for any day of the week lunch or dinner!

Ingredients
  

  • 500 grams 250 grams x 2 salmon fillets boneless and skinless
  • salt and pepper to taste
  • 2 tsps. Smell and Taste Cajun seasoning
  • 1 /1/4 tsps. Italian Calabrese seasoning Smell and Taste
  • 4 tbsps. Extra Virgin Olive oil

Instructions
 

  • Preheat the oven to 190 C / 385 F
  • Brush a teaspoon of olive oil onto a baking dish.
  • Pour 2 to 3 tablespoons of olive oil into the spices, blend and set aside.
  • On aboard, place the salmon fillets skin side down and pat them dry, Sprinkle with a light seasoning of salt and pepper. No need to turn them over.
  • Transfer the fillets to the prepared baking dish and spread the oil and spice mix covering the fillets. Bake for 10 minutes, remove the dish from the oven, turn the oven setting to grill, move the rack up one level, and give the grill a minute to get hot. When the grill is hot, return the salmon fillets to the oven for 2 to 4 minutes. Put your timer on for 2 minutes grilling time, from the time that the grill is hot and the salmon is in. After 2 minutes, check and give it another minute or 2 if necessary.Your salmon would've cooked for a total of 14 minutes which is more than adequate for a tender cooked salmon fillet.
  • Remove the salmon from the oven and garnish with chopped parsley to serve.

Please note that cooking times vary according to the thickness of your salmon. These salmon fillets were not very thick so needed less time. Once you've removed the salmon from the oven, there's no urgency to get them out the hot dish. Place your oven dish on a cooling board/mat and they will finish cook for another minute or 2. 
Should you have cooked your salmon for a longer time, then remove them immediately from the hot dish onto a serving plate to stop cooking. The heat from the dish will continue cooking them otherwise.
