Avocado Caprese Salad on Toast

The perfect breakfast or brunch Avocado Caprese Salad on Toast with vinaigrette dressing and balsamic glaze.

Ingredients
  

  • 2  slices toast
  • 1  avocado  half per toast
  • ½ lemon juice
  • 1 garlic clove peeled unchopped
  • 1 tablespoon extra virgin olive
  • salt and pepper

Caprese Salad

  • 2 40 grams bocconcini 
  • 200 grams cherry tomatoes
  • 1  cup fresh basil

Salad Dressing

  • 3 tbsps extra virgin olive oil
  • 1 /2 tsp dijon mustard
  • 1 tbsp white wine vinegar
  • 1 /4 tsp Calabrese spice Smell and Taste

Other

  • balsamic glaze

Instructions
 

  • Preheat the grill of your oven to toast the bread.
  • Brush the bread with olive oil, both sides. Toast till golden brown, flip and toast the other side.
  • In a bowl use a fork to smash the avocado, add the lemon, salt & pepper.
  • Rub the garlic over the toasted bread. Just the side where the filling will go.

Caprese Salad and Dressing

  • In a jar, mix the caprese salad dressing ingredients, shake to combine. In a bowl add the caprese salad ingredients and pour the dressing over.
  • Spread the avocado over the toast, top it off with the caprese salad and flaky salt.
  • Right before serving, drizzle balsamic glaze. Enjoy!

Notes

  • Balsamic Glaze is a simmered reduction of balsamic vinegar. You can make your own or you can buy it. Both the homemade version and store bought last a long time since the taste is powerful you use just a little. Balsamic Glaze Recipe
