Instant Pot Mashed Potatoes Recipe

These Instant Pot Buttery Mashed Potatoes are completely irresistible and it doesn't get any better than this! Soft, fluffy and creamy mashed potatoes that are impossible to resist!

Ingredients
  

  • 6 to 8 potatoes peeled and cut into squares
  • 1 +½ cup water
  • 1 teaspoon fine salt
  • ¾ cup butter unsalted (113 grams) used in 3 parts
  • ¼ cup sour cream
  • 1 teaspoon salt and pepper
  • ½ cup warmed milk
  • 1 tablespoon chopped fresh parsley

Instructions
 

  • Wash, peel, and quarter the potatoes.
  • Add the potatoes, water, and salt to the instant pot's inner pot.
  • Lock the lid and set the valve to 'SEAL.'
  • Cook on high pressure for 8 minutes using the MANUAL +/- button. Let the pressure release naturally for a minute before turning the valve to VENT to release the steam.
  • Drain the water and return the potatoes to the pot. Use the SAUTE setting to remove any remaining moisture.
  • Add milk, butter, sour cream, salt, pepper, and mashed potatoes. Mix well.
  • Add parsley and melted butter, then mix vigorously with a wooden spoon.
  • Add the remaining butter in the center, place the lid on to keep warm and let the butter melt.
  • Keep warm in the instant pot on the 'KEEP WARM' setting until ready to serve.

The instant pot needs liquid in order to cook the food so add about a cup and a half for 8 medium sized potatoes. 
You don't have to peel your potatoes, we peel them for mashed potatoes in this recipe. 
If you can, warm the milk up, it doesn't have to be piping hot, warm is better than ice cold. 
Cooks Tips: 
I believe in layers so add the ingredients for the mashed potatoes in layers. In other words - milk, mix, salt and pepper, mix, butter (in separate parts) mix, another addition of butter, mix etc. 
When you use the butter in separate parts you will get a more rich and tasty mashed potatoes all the way through as opposed to adding it all at once and then over mixing!
Soft butter - first part, melted butter second part and last soft butter un-mixed, left to melt in with the lid on. 
Feel free to omit the fresh parsley but it does shine in this creamy mashed potato recipe proving once again, that it's so much more than just garnish.
