Description
This is a delicious oven baked chicken breasts recipe that's perfect for any day of the week for lunch or dinner. Serve with an easy salad, vegatables or any of your favorite side dishes and use any leftovers for lunch sandwiches. 30 Minutes or less!
Ingredients
- 4 chicken breasts
- 2 tbsps white wine vinegar or lemon,
- 4 tbsps olive oil
- 2 tsps flavor-packed chicken spice
- salt & pepper
Instructions
Oven Baked Chicken Breasts
- Preheat the oven to 220 degrees C /425 degrees F with the rack in the middle.
- Combine olive oil, spice, lemon juice, salt and pepper, set aside.
- Place the chicken breasts on a flat surface, cover with plastic wrap and use a meat mallet or wooden rolling pin to pound the breasts. Pound only the thicker parts, they cook quicker and more evenly.
- Season the chicken breasts with salt and pepper and pour the olive oil over, use your fingers to rub it in. Sprinkle the chicken seasoning over. Apply these steps to both sides of the chicken fillets.
- Bake for 20 minutes or until the internal temperature reads 75°C/ 165°F using a meat thermometer.
- Transfer the chicken to a serving platter as soon as they are ready otherwise they continue cooking in the hot oven tray.
- Wait 3 to 4 minutes before serving.
Notes
Chicken spice: We use this one. If you don't have a chicken spice blend, use a teaspoon each of dried oregano and paprika.
Olive oil: If the side dish is mashed potato, it's good to bake these chicken fillets in more oil then use the pan oils over the mashed potatoes when serving.
Salad: Serve these fillets with a salad, in which case, stick to the 1/4 cup measurement of olive oil as per recipe. Chicken breast have minimum fat (very low in fat) so anything less than 4 tablespoons (1/4 cup) is not enough to flavor the chicken breasts especially when there is no other fat being used like cream.
Serve with potato salad or buttery mashed potatoes!
