3 Easy Rice Cake Snacks for Workouts

Three easy rice cake snack combinations that are quick to prepare and great when you want something light before a workout. Choose from sweet almond butter and banana, savoury avocado and tuna, or cottage cheese and berries.

Ingredients
  

Snack 1 — Almond Butter & Banana

  • 1 rice cake
  • 1 tbsp almond butter
  • ½ banana sliced
  • 1 tbsp cottage cheese
  • ½ tsp sesame seeds
  • 1 tsp honey
  • ¼ tsp ground cinnamon
  • Pinch of salt
  • Small amount hot sauce
  • 1 whole almond for garnish

Snack 2 — Avocado, Tuna & Capers

  • 1 rice cake
  • ¼ avocado
  • ¼ cup canned tuna drained
  • 1 tsp capers
  • Black pepper optional
  • Lemon juice optional

Snack 3 — Cottage Cheese & Berries

  • 1 rice cake
  • 2 tbsp cottage cheese
  • ¼ cup fresh berries
  • 1 tsp honey
  • ½ tsp chia or hemp seeds
  • Pinch of cinnamon

Instructions 

Snack 1

  • Spread almond butter over the rice cake.
  • Add sliced banana and cottage cheese.
  • Sprinkle with sesame seeds, cinnamon and a small pinch of salt.
  • Drizzle with honey and add a little hot sauce.
  • Garnish with an almond and serve immediately.

Snack 2

  • Mash or spread avocado over the rice cake.
  • Top with drained tuna.
  • Add capers and season with black pepper if desired.
  • Add a squeeze of lemon, if using.
  • Serve immediately.

Snack 3

  • Spread cottage cheese over the rice cake.
  • Add fresh berries.
  • Drizzle with honey.
  • Sprinkle with chia or hemp seeds and cinnamon.
  • Serve immediately.
