Equipment

  • Medium pan (preferably stainless steel)
  • Wooden spoon or spatula
  • Whisk

Ingredients

  • 1/4 cup butter
  • 3 –4 tablespoons olive oil
  • 5 –6 cloves fresh garlic finely chopped or minced, optional to taste
  • Juice of 2 fresh lemons
  • 1 cup 250ml thick cooking cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons capers
  • Salt and cracked black pepper to taste

Instructions

  • Heat a pan over low heat for about 1–2 minutes.
  • Add the butter and olive oil, allowing the butter to melt gently.
  • Add the garlic (if using) and cook for 1–2 minutes until fragrant, keeping the heat low to avoid burning.
  • Pour in the cream and stir gently for 1–2 minutes.
  • Add the fresh lemon juice and allow the sauce to simmer and reduce slightly.
  • Season with salt and cracked black pepper to taste.
  • Once the sauce has thickened slightly, stir in the grated Parmesan cheese.
  • Remove from heat and add the capers. Stir gently and serve warm.

Notes

  • Garlic is optional — you can reduce or omit it depending on preference or dietary needs.
  • Use your favorite meat or all-purpose seasoning instead of relying on garlic for flavor depth.
  • Keep the heat low throughout to prevent the cream from splitting.
  • If the sauce looks slightly separated, whisk in a splash of hot water to bring it back together.
  • If the sauce thickens too much while standing, loosen it with a little warm water or milk before serving.
  • Freshly grated Parmesan works best for a smooth, creamy texture.
  • This sauce is ideal for meal prep and can be stored in jars for quick use during the week.
