Ingredients

  • 2 cups whole almonds
  • 2 tablespoons cinnamon sugar
  • ¼ cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

Instructions

  • Preheat the Air Fryer: Preheat to 180°C / 350°F for 3–5 minutes.
  • Season the Almonds: In a bowl, combine almonds, olive oil, cinnamon sugar, cumin, and smoked paprika. Toss well to coat evenly.
  • Arrange in Basket: Spread the almonds in a single layer in the air fryer basket.
  • Air Fry: Air fry for 8–10 minutes, shaking the basket every 3 minutes. For deeper color and crunch, cook up to 12 minutes, watching closely to prevent burning.
  • Cool & Crisp: Transfer to a tray and allow to cool completely — they crisp as they cool.
  • Serve or Store: Enjoy immediately or store in an airtight container once fully cooled.

Notes

  • Extra Spicy: Add a pinch of cayenne pepper or chili flakes.
  • Maple-Spiced: Replace cinnamon sugar with maple syrup + cinnamon and reduce oil slightly.
  • Savory Only: Skip the sugar and increase cumin and paprika for a smoky savory snack.
  • Nut Mix: Use a mix of almonds, cashews, and pecans (same timing, just shake well).

FAQ

Q: Can I use raw or roasted almonds?
A: Raw almonds are best for this recipe so they absorb the flavor as they toast. Pre-roasted almonds can burn faster.
Q: Why do my almonds taste soft right after cooking?
A: They firm up as they cool. Always let them cool completely before judging texture.
Q: Can I make these ahead of time?
A: Yes! Once cooled, store in an airtight container for up to 2 weeks at room temperature.
Q: Can I double the batch?
A: It’s best to cook in two batches so the almonds stay in a single layer for even crisping.
Q: Are these sweet or spicy?
A: Both — lightly sweet from the cinnamon sugar with a warm smoky heat from cumin and paprika. You can easily adjust the balance to suit your taste.
