Heat a non stick pan and cook the onions for 8 to 10 minutes on medium. The onion must sweat before you add the garlic. If they start sticking to the pot, lower the heat.
Add the garlic, tomato paste, Smell & Taste spice paste (if using) and the white wine. Add salt and pepper and cook for 5 minutes on simmer.
Add the cooked rice and gently combine using a spatula to spare breaking the rice grain.
Serve with sliced avocado, baby spinach leaves, crumbled feta, parmesan cheese, avocado dressing and seasoning.
