Avocado and Rice Bowl

Avocado and rice bowl with fried onions and spices to create a tasty rice, topped with sliced avocado and avocado dressing.

Cook Time 20 minutes
Total Time 30 minutes

Ingredients
  

  • ½ onion finely chopped
  • 1 garlic clove minced
  • 1 tablespoon tomato paste
  • 1 tablespoon Smell & Taste Spice Paste
  • ¼ cup white wine
  • 2 tablespoons oil

Veg and Dressing

  • 1 ½ avocado's
  • 1 cup baby spinach
  • ¼ cup feta cheese 1 of those blocks from the feta container
  • ½ teaspoon salt and pepper or to taste
  • Parmesan cheese
  • avocado dressing

Instructions
 

  • 1 x Recipe Cooked Rice
  • 1 x Recipe Avocado Salad Dressing
  • Heat a non stick pan and cook the onions for 8 to 10 minutes on medium. The onion must sweat before you add the garlic. If they start sticking to the pot, lower the heat.
  • Add the garlic, tomato paste, Smell & Taste spice paste (if using) and the white wine. Add salt and pepper and cook for 5 minutes on simmer.
  • Add the cooked rice and gently combine using a spatula to spare breaking the rice grain.
  • Serve with sliced avocado, baby spinach leaves, crumbled feta, parmesan cheese, avocado dressing and seasoning.
