Total Time 10 minutes
Servings :2 people

Ingredients

  • 2 cups mixed greens such as baby spinach, arugula, or spring mix
  • 250 grams 1 cup of fresh strawberries halved
  • 1 cup fresh blueberries or raspberries, blackberries
  • 4 - 6 slices high-quality prosciutto
  • 1/2 cup blue cheese or your favorite cheese; goat cheese, feta, or gorgonzola cubed or crumbled

Salad Dressing

  • 1/4 cup olive oil
  • 2 tbsps balsamic
  • 1 tbsp honey
  • salt and freshly ground black pepper to taste

Optional

  • nuts and seeds for crunch

Instructions

  • Prepare the Greens: Wash and thoroughly dry the mixed greens. Place them in a large salad bowl, ensuring they're ready to be the base for our delicious salad.
  • Wash and Prep the Berries: Rinse the strawberries and blueberries under cold water. Pat them dry gently with a paper towel. Slice the strawberries in halves and set aside.
  • Assemble the Salad: Start by layering the mixed greens in your salad bowl. Then, artfully arrange the fresh berries, cheese, and nuts and seeds (if you choose to use them) on top.
  • Create the Dressing: In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, honey, salt and black pepper until well combined.
  • Drizzle and Toss: It's best to give everyone the chance to dress their own salad however if you do dress it: Just before serving, drizzle the dressing over the salad. Be mindful not to overdo it; you can always add more if needed. Gently toss the salad to ensure the dressing is evenly distributed.
  • Garnish with Prosciutto: Finish the salad by scattering the prosciutto pieces over the top, adding a layer of saltiness and crunch.
  • Serve and Enjoy: Serve your Berries, Prosciutto, and Cheese Salad immediately. It's best enjoyed fresh, as the flavors and textures are at their peak.
