Berry Summer Parfait

This berry summer parfait is incredibly delicious and easy to make with 4 key ingredients. You need fruit, yogurt and granola and honey that's it! If you don't like honey or maple syrup, then you need just 3 simple ingredients, no cooking and 5 minutes!

Ingredients
  

For the Yogurt and Granola

  • 2 cups strawberries whole
  • 2 cups blueberries
  • 2 cups organic plain yogurt Greek yogurt or any plain unsweetened yogurt
  • 1 cup granola - homemade or store-bought
  • raw honey or maple syrup

Instructions 

  • Wash all the berries and pat them dry using kitchen tissue paper or kitchen towel.
  • Thinly slice the strawberries, leaving two whole to garnish later.

To Layer the Parfait

  • In a short glass with a wide brim, carefully add generous spoonfuls of yogurt to the base of the glass.
  • Add a layer of blueberries.
  • Sprinkle the granola followed by sliced strawberries. Keep going with the layers until you reach the top. Spare a few sliced strawberries for the top.

Finishing

  • Add a few sliced strawberries, one whole strawberry, coco nibs, a sprinkle of unsweetened coco powder, a drizzle of raw honey and a fresh mint leaf.
  • Note: If in season, pomegranate arils in-between the layers give a pop of color, a little sweetness and a little tartness to the taste.

Notes

Use high quality ingredients making fresh and seasonal you first choice.
Greek yogurt is not alway easy to find depending on where you are. Use your favourite type of yogurt as long as it's a fairly thick plain yogurt.
Homemade granola is so much better than any store-bought and it takes a few short minutes to make your own!
If you can, use raw honey for a healhier option.
A touch of vanilla extract is always a pleasant idea. 
These stunning yogurt parfaits can be made a few hours ahead. Keep refrigerated and covered. 
Add 3 layers if you prefer in a large glass for a triple berry parfait!
If it's your first time making this delicious dessert, take it slow and don't rush it. Layer the yogurt carefully with a spoon.
