Coconut Yogurt Bowl

This breakfast is refreshing, healthy, delicious, vegan, dairy free and takes a few minutes to make including a quick stewed strawberry compote. It is amazing!

Ingredients
  

  • 1 cup coconut yogurt
  • 3 large fresh strawberries rinsed, stems removed and cut in half
  • 1 tbsp coconut sugar or any sweetener of your choice eg. regular cane sugar, honey, maple etc.
  • 2 tbsp organic berry juice or a regular juice

Instructions 

  • Add the cleaned strawberry halves, sugar and juice into a small saucepan and bring them to a medium simmer.
  • Once heated, drop to a low simmer and cook till the strawberries soften. Add a little more juice if needed (by the tablespoon! not too much)
  • Add the yogurt to a bowl and pour in the juice and stewed strawberries followed by your toppings
  • Serve with fresh blueberries and fresh mint.
