Coconut Yogurt Bowl
This breakfast is refreshing, healthy, delicious, vegan, dairy free and takes a few minutes to make including a quick stewed strawberry compote. It is amazing!

Add the cleaned strawberry halves, sugar and juice into a small saucepan and bring them to a medium simmer.
Once heated, drop to a low simmer and cook till the strawberries soften. Add a little more juice if needed (by the tablespoon! not too much)
Add the yogurt to a bowl and pour in the juice and stewed strawberries followed by your toppings
Serve with fresh blueberries and fresh mint.
