Ingredients

  • 2 cups (250g) plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 3/4 cup (180ml) water (plus more if needed)

Instructions

  • Preheat oven to 220°C (425°F). Line a baking tray with parchment paper.
  • Make the dough: In a mixing bowl, whisk together flour, baking powder, and salt. Stir in olive oil and water until a soft dough forms.
  • Shape the base: Turn the dough out onto a floured surface and gently shape into a round or rectangle. Roll out to desired thickness (thinner = crisper).
  • Top your flatbread: Transfer to prepared tray, spread with sauce, add toppings and cheese.
  • Bake for 12-15 minutes or until golden, bubbling, and cooked through.

Notes

Optional toppings:

  • Tomato sauce or pesto
  • Mozzarella or any cheese you love
  • Cooked vegetables or meats
  • Fresh herbs (oregano, basil, thyme)

Recipe Notes

  • Be careful not to overmix the dough — stir just until it comes together.
  • Roll the dough thinner for a crispier base, or thicker for a softer bite.
  • Don’t overload with sauce or toppings; keep it balanced for the best texture.
  • You can mix dried herbs like oregano or garlic powder into the dough for extra flavour.
