Easy crispy and Spicy Chicken Thighs with juicy tender meat and mouth-watering crispy skin that's packed with flavor! This is a real thing of beauty and all you have to do is prepare yourself for the most irresistable chicken thighs that you've ever tasted.
Preheat the oven to 220°C (428°F). Fan forced 195°C (383°F) The chicken thighs should be removed from the fridge and allowed to reach room temperature. With kitchen paper towel, pat them dry, removing any moisture.
Place the now dry chicken thighs, on a large plate and season well with salt and pepper. Add the olive oil and rub into the chicken.
Add half the spice and pat into the chicken. Lift the skin and get some spice underneath. Gently pull the skin back to cover the thigh (looks neater too).
Transfer to a roasting pan with a rack or directly onto a roasting pan if you don't have a rack. Sprinkle the remaining spices over covering the surface of the skin.
Bake the Chicken Thighs
Bake for 40 minutes or until a meat thermometer reaches 74°C (165°F).
Rest for 5 to 10 minutes and enjoy!
Notes
Grill/Broil: I didn't find the need to grill to get the skin extra crispy but if you need it more crispy, grill (broil) for 2 minutes. You should watch it doesnt instantly burn the spices.
