For the dressing

extra virgin olive oil

juice of a fresh lemon

Instructions
Combine the dressing ingredients, olive oil, lemon juice, oregano, salt and pepper in a small bowl and whisk together.
In a large bowl toss together the spinach, cherry tomatoes and mozzarella and pour the dressing over, toss well together.
Serve:
Transfer the salad to a serving bowl and serve immediately and enjoy!
