Healthy Air Fryer Chicken and Veggies

This healthy air fryer chicken and veggies has juicy, tender chicken and perfectly roasted veggies. A quick and easy air fryer recipe that delivers all the flavors you crave in just 20 minutes!

Ingredients
  

  • 2 medium chicken breasts
  • 2 teaspooons chicken seasoning
  • 1 eggplant
  • 1/2 large bell pepper any color, you can use 1 whole bell pepper if you prefer
  • 2 fresh tomatoes San Marzano or any ripe firm tomatoes
  • Salt
  • Black pepper
  • Vegetable spice
  • Fresh parsley
  • Pine nuts toasted

Instructions 

  • Preheat the air fryer to 200C/400F
  • Clean and chop the eggplant, tomatoes, bell pepper and chicken into chunky 1-inch cubes.

Combine on Parchment Paper

  • Place the chopped veggies and chicken on a large piece of parchment paper.
  • Season everything with salt, black pepper and add the spices.
  • Drizzle with extra virgin olive oil and toss lightly with your hands to coat.
  • Place the parchment paper with the chicken and veggies into the air fryer basket and cook at 200°C (392°F) for 20 minutes.
  • You don’t need to turn halfway through, just peek in to check all is still okay in the las 5 minutes. No need to worry about the juices—they keep the food moist—but don’t overcook to avoid burnt tops.

Notes

  • The chunky pieces help everything cook evenly and prevents shrinking.
  • Drizzle olive oil over the eggplant pieces the minute you've chopped them, it will help prevent them from going dry, retain moisture and keep them coated while cooking. 
  • When adding salt, check the salt in your spices and adjust accordingly.
