Equipment

  • Blender or mixing bowl
  • Spoon or spatula

Ingredients

  • 1 cup roasted cherry tomatoes or canned tomatoes, drained slightly
  • 1 small garlic clove minced (or ½ teaspoon garlic powder)
  • 2 –3 tablespoons Greek yogurt or cream
  • 1 –2 teaspoons lemon juice
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Optional:

  • Chili flakes
  • Fresh herbs parsley or basil
  • Grated Parmesan or Pecorino

Instructions

  • Add the roasted tomatoes and garlic to a blender or bowl. Blend or mash until mostly smooth (a little texture is fine).
  • Stir in the yogurt or cream until the sauce turns a soft pink color.
  • Add lemon juice, olive oil, salt, and pepper. Mix well and taste.
  • If using with pasta, add a splash of warm pasta water to loosen the sauce.
  • Toss with pasta or use as desired. Serve immediately.

Notes

  • Use roasted tomatoes for deeper flavor, but canned tomatoes work well too.
  • Greek yogurt gives a lighter, tangier sauce; cream makes it richer.
Add liquid gradually to control the consistency.
  • This sauce is very flexible — adjust ingredients based on what you have.
