Quinoa and Sundried Tomatoes

This is an easy, super healthy, satisfying, energy boosting quinoa and sundried tomato salad that I simply had to share! The nutty quinoa texture, salty sundried tomatoes, fresh baby mozzarella balls and seasonal fresh vegetables make this a favorite!

Ingredients
  

  • 1 cup cooked quinoa recipe link below
  • 1/2 cup sliced cherry tomatoes
  • 1/4 cup sundried tomatoes packed
  • 1 cup rotisserie chicken cubed or shredded
  • 1 1/2 cups rocket or mixed salad greens
  • fresh mozzarella balls and a light grated parmesan cheese optional

Salad Dressing

  • 4 tbsps. oil from the sundried tomatoes or olive oil
  • 2 tbsps fresh lemon juice 1/2 lemon
  • salt to taste
  • fresh black pepper

Instructions 

  • 1 x recipe fluffy quinoa.
  • Add the oil from the sundried tomatoes into a side dish or bowl. Use olive oil if your sundried tomatoes don't have enough oil. Add lemon juice and pepper and taste for salt.
  • Rinse and drip drain the salad greens. Chop the cherry tomatoes, chicken pieces and sundried tomatoes.
  • Add the salad greens with the cooked quinoa followed by the tomatoes and chicken. Combine, add the dressing, taste and adjust. Add fresh mozzarella balls and a light grated parmesan if using.
