Ingredients

–4 medium sweet potatoes
▢

cooked chicken breasts
shredded or chopped
▢
½
–1 cup shredded cheese
cheddar or mozzarella
▢
½
cup
plain yogurt
or Greek yogurt
▢
½
–1 cup pink sauce
5-Minute Sauce
▢
Olive oil
▢
Salt & black pepper
Optional extras
▢
Chili flakes
▢
Fresh herbs
parsley or chives

Sliced avocado

Instructions
Cook the sweet potatoes
Oven: Bake at 200°C (390°F) for 40–50 minutes until soft
Or air fryer: 180°C for 30–40 minutes
Prep the filling
In a bowl, mix chicken with half the pink sauce
Season lightly with salt and pepper
Slice and fluff
Cut open the sweet potatoes
Gently mash the inside with a fork
Stuff
Add chicken mixture
Top with cheese
Melt
Return to oven or air fryer for 5–10 minutes until cheese melts
Finish
Spoon over yogurt
Drizzle remaining pink sauce
Add any extras
