Boil some water in the kettle and pour it into a pot and cook the angel hair pasta. It needs a minute to cook, remove it from the water and set aside. It will finish cooking in the pan. Don't over cook it! Please note that this can be done somewhere in between the tomatoes cooking so that your pasta is not standing in a pot waiting.
Cook till the tomato are bursting with flavor and juices, about 3 minutes
Move the tomatoes to one side of the pan (so as not to press them down completely) and add the cut chicken pieces. Season the chicken pieces with the same spices and add a tiny drizzle of olive oil if necessary about 1/2 teaspoon.
Combine and let it cook for about minute with the tomatoes. Add the homemade basil pesto.
Add the cooked angel pasta and enjoy!
Serve with a squeeze of fresh lemon, a dollop of yogurt, sour cream and fresh herbs.
