Baked Air Fryer Sweet Potato (Skin-On)

An easy baked air fryer sweet potato recipe made with the skin on — soft inside, crispy outside, and perfect for a healthy side or meal prep.

Ingredients
  

  • 2 medium sweet potatoes (around 250–300 g / 8–10 oz each)
  • 2 teaspoons olive oil (optional, for crispy skin)
  • ½ teaspoon sea salt (or to taste)
  • Black pepper
  • ¼ freshly ground black pepper

Instructions 

  • Preheat your air fryer if your model needs it.
  • Wash and dry the sweet potatoes well.
  • Poke a few holes (2–3 per potato) with a fork so steam can escape.
  • Rub with olive oil and, if you like, sprinkle a little salt and pepper.
  • Air fry at 190°C (375°F) for 35–45 minutes, flipping halfway through for even crispness.
  • Check for doneness: a fork should slide in easily when they’re ready.
  • Serve warm or cool completely and store for later.

Notes

  • Cooking time: Small sweet potatoes may be done in 20–25 minutes, while large ones can take up to 45. Adjust as needed.
  • Optional oil: A light coating of olive oil helps the skin crisp and adds flavor.
  • Don’t overcrowd the basket: Leave some space between potatoes for even air circulation.
  • Store in the fridge: Store up to 5 days or freeze up to 2 months. Reheat in the air fryer or microwave.
  • Seasoning: You can skip the oil and seasoning entirely — sweet potatoes are naturally flavorful and turn out beautifully tender on their own.
  • Meal Prep Tip: Cook a batch ahead of time and store them in the fridge for easy grab-and-go lunches or quick sides during the week.
