Cucumber, Tomato & Feta Salad with Herb Vinaigrette

A vibrant and refreshing tomato cucumber and feta salad with briny capers and a light vinaigrette. Perfect as a light lunch, side dish, or part of a Mediterranean spread.

Ingredients
  

  • 2 medium cucumbers, thinly sliced
  • 2 large ripe tomatoes, sliced into rounds or wedges
  • 100 grams feta cheese, crumbled
  • 1 tablespoon capers, drained
  • 2 tablespoons fresh herbs (parsley, basil or dill), chopped
  • Salt and freshly ground black pepper, to taste

For the Herb Vinaigrette

  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar (or lemon juice)
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, finely minced
  • 1 tablespoon finely chopped herbs (same as above)

Instructions 

  • Prepare the vegetables: Slice cucumbers and tomatoes and arrange them on a platter or in a large bowl.
  • Make the vinaigrette: Whisk together the olive oil, vinegar (or lemon juice), Dijon mustard, garlic, chopped herbs, and a pinch of salt and pepper.
  • Assemble the salad: Top the vegetables with crumbled feta and capers.
  • Dress and serve: Drizzle the herb vinaigrette over the salad just before serving. Serve chilled or at room temperature

Notes

  • Use heirloom tomatoes for added colour and sweetness.
  • Persian or English cucumbers are ideal as they have thinner skins.
  • Adjust the herbs to what you have — dill gives it a Scandinavian feel, while basil leans Mediterranean.
