Prepare the vegetables: Slice cucumbers and tomatoes and arrange them on a platter or in a large bowl.
Make the vinaigrette: Whisk together the olive oil, vinegar (or lemon juice), Dijon mustard, garlic, chopped herbs, and a pinch of salt and pepper.
Assemble the salad: Top the vegetables with crumbled feta and capers.
Dress and serve: Drizzle the herb vinaigrette over the salad just before serving. Serve chilled or at room temperature
Use heirloom tomatoes for added colour and sweetness.
Persian or English cucumbers are ideal as they have thinner skins.
Adjust the herbs to what you have — dill gives it a Scandinavian feel, while basil leans Mediterranean.
