Healthy Beef Bowl Recipe

A satisfying high-protein beef bowl made with air fryer beef bites, sweet potato, couscous, spinach, avocado, pineapple and quick pickled red onion, finished with a creamy yogurt dressing.
Servings :1 1-2 people

Ingredients
  

  • 150 g prepared air fryer beef bites
  • 150 g cooked sweet potato
  • 1/2 cup cooked couscous
  • 1 cup fresh spinach steamed
  • 1/2 avocado sliced
  • 1/3 cup fresh pineapple chopped
  • 1/4 small red onion thinly sliced
  • 1 tbsp red wine vinegar
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp plain Greek yogurt or yogurt dressing
  • 1 tbsp fresh parsley or other fresh herbs optional

Instructions 

  • Prepare the beef bites: Make the Air Fryer Beef Bites according to the linked recipe, using the smaller beef bite variation if desired. For smaller bites, air fry at 200°C/400°F for 10–12 minutes, then reduce to 190°C/375°F and cook for another 5 minutes, or until cooked through.
  • Cook the sweet potato: Prepare the sweet potato according to the linked recipe. It can be made ahead and reheated before serving.
  • Make the quick pickled onion: Add the sliced red onion to a small bowl. Pour over the red wine vinegar and add a pinch of salt. Toss and leave to sit while preparing the remaining ingredients.
  • Prepare the couscous: Cook the couscous according to the recipe or packet instructions.
  • Steam the spinach: Steam or wilt the spinach until tender.
  • Assemble: Add the couscous and spinach to a serving bowl. Arrange the beef bites, sweet potato, avocado and pineapple around the bowl.
  • Finish: Add the quick pickled red onion and drizzle with the yogurt dressing. Garnish with fresh herbs if using and serve immediately.

Notes

  • The beef bites and sweet potato can both be prepared ahead for easy meal prep.
  • Use rice, quinoa or another favourite grain instead of couscous if preferred.
  • The pineapple adds a lovely sweet contrast to the savoury beef and tangy pickled onion.
  • For a gluten-free bowl, use rice or a certified gluten-free grain instead of regular couscous.
  • Cooking times for the beef bites are a guide only. Air fryers vary, and smaller beef bites will cook more quickly than larger ones.
