Healthy Beef Bowl Recipe

This healthy beef bowl is one of the ways I’m learning every day how—and what—to eat. It starts with my easy Air Fryer Beef Bites and adds a little sweetness, crunch and variety to create a satisfying lunch or dinner.

With 44 g of protein and 14 g of fibre per serving, this is a substantial bowl that keeps me satisfied for hours.

I’ve loaded this bowl with creamy avocado, roasted sweet potato, steamed spinach, fluffy couscous, juicy pineapple and a quick yogurt dressing. Then comes my little shortcut: cheat pickled red onion.

The pickled red onion adds that delicious tangy bite of “ooh-la-la” while bringing colour and crunch to the bowl.

I served everything with fluffy couscous and steamed spinach, and honestly, it made such a delicious lunch.

Why You’ll Love This Beef Bowl

Easy to meal prep: Make the beef bites and sweet potato ahead of time and assembling the bowl becomes quick and easy.

A satisfying combination: You get protein from the beef, healthy fats from avocado and yogurt, fibre from the vegetables and fruit, and carbohydrates from the couscous and sweet potato.

Lots of flavour and texture: Creamy avocado, fluffy couscous, tender beef, sweet pineapple and tangy pickled onion make every bite different.

Sweet and savoury: The pineapple adds a little natural sweetness, which is something I personally enjoy when I’m craving something sweet in the afternoon.

Flexible: Use couscous, rice or another favourite grain as your base.

In this bowl, I’ve used the same idea as my High-Protein Lunch Bowl where I add fruit to my meal.

For me, adding sliced apple to that bowl helped make lunch more satisfying when I was still experiencing an afternoon sweet craving, as I shared in this video.

What You Need To Know Before You Begin

The star of this bowl is my Air Fryer Beef Bites.

I love making these ahead because they are so versatile. They can be served as part of a meal like this, packed into a lunch, enjoyed as a snack or frozen for another day.

For this bowl, I made a slightly different version of the beef bites. Because I wanted them to be smaller and more snack-sized, I added grated carrot, spring onion, chopped parsley and small bell peppers, along with Parmesan cheese, egg and my usual spice blend.

My Beef Bite Variation

For the smaller beef bites, I used:

  • Ground beef
  • Grated carrot
  • Spring onion
  • Chopped fresh parsley
  • Snack bell peppers, finely chopped
  • Parmesan cheese, grated
  • Egg
  • Garlic powder
  • Paprika
  • Ground cumin
  • Italian seasoning
  • Salt and black pepper

The preparation is the same as my original Air Fryer Beef Bites, but because these bites are smaller, the cooking time is different.

I air fried mine at 200°C/400°F for 10–12 minutes to get that lovely browned crust, then reduced the temperature to 190°C/375°F for another 5 minutes, or until cooked through.

Cooking times can vary depending on the size of your beef bites and your air fryer, so use these times as a guide and check that the beef is fully cooked.

How To Make This Healthy Beef Bowl

1. Prepare the beef bites

Prepare the beef bites according to my Air Fryer Beef Bites recipe, using the smaller beef bite variation above.

Air fry the smaller bites at 200°C/400°F for 10–12 minutes, then reduce to 190°C/375°F and cook for another 5 minutes, or until cooked through.

2. Cook the sweet potato

Prepare the sweet potato according to my Air Fryer Sweet Potato recipe.

You can make the sweet potato ahead of time and simply warm it before assembling your bowl.

3. Make the quick pickled red onion

Chop or thinly slice some red onion and place it in a small bowl or jar.

Add a splash of red wine vinegar and a pinch of salt. Give everything a good mix and leave it to sit while you prepare the rest of the bowl.

This isn’t a traditional long-pickled onion—it is my quick cheat version for when I want that lovely tangy flavour without waiting.

4. Prepare the couscous and spinach

Prepare the fluffy couscous according to the recipe.

Steam or wilt the spinach until tender.

5. Assemble the bowl

Add the couscous and spinach to your bowl.

Arrange the warm beef bites and sweet potato alongside the avocado and chopped pineapple.

Add a spoonful of the quick pickled red onion, drizzle over your favourite yogurt dressing and finish with fresh herbs if using.

Serve immediately and enjoy!

A Few Tips

Make it ahead.
The beef bites and sweet potato can both be prepared ahead, making this a very easy bowl to assemble during the week.

Change the base.
Couscous is lovely here, but you could also use rice, quinoa or another grain you enjoy.

Don’t skip the pineapple.
The little bursts of sweetness work surprisingly well with the savoury beef, creamy avocado and tangy onion.

Adjust the dressing.
Use plain Greek yogurt with a little seasoning for a simple dressing, or use my quick pink sauce when you want something a little more fun.

Storage

For meal prep, store the components separately where possible and assemble the bowl just before eating.

Cooked beef bites and sweet potato can be refrigerated and reheated until hot. Keep avocado, pineapple, spinach, couscous, dressing and pickled onion separately for the best texture.

Can I use rice instead of couscous?

Absolutely. Rice would be a great substitute and works particularly well if you prefer a gluten-free base.

Can I make the beef bites ahead?

Yes. This is one of the reasons I love these beef bites. They can be made ahead and used for lunches, dinners or snacks throughout the week.

Can I use a different dressing?

Definitely. A simple yogurt dressing, your favourite homemade dressing or my quick pink sauce will all work.

Can I make this bowl gluten-free?

Yes. Use a certified gluten-free grain or rice instead of regular couscous, and check the ingredients in your beef bite seasoning and dressing.

A satisfying high-protein beef bowl made with air fryer beef bites, sweet potato, couscous, spinach, avocado, pineapple and quick pickled red onion, finished with a creamy yogurt dressing.

Ingredients
  

  • 150 g prepared air fryer beef bites
  • 150 g cooked sweet potato
  • 1/2 cup cooked couscous
  • 1 cup fresh spinach steamed
  • 1/2 avocado sliced
  • 1/3 cup fresh pineapple chopped
  • 1/4 small red onion thinly sliced
  • 1 tbsp red wine vinegar
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp plain Greek yogurt or yogurt dressing
  • 1 tbsp fresh parsley or other fresh herbs optional

Instructions 

  • Prepare the beef bites: Make the Air Fryer Beef Bites according to the linked recipe, using the smaller beef bite variation if desired. For smaller bites, air fry at 200°C/400°F for 10–12 minutes, then reduce to 190°C/375°F and cook for another 5 minutes, or until cooked through.
  • Cook the sweet potato: Prepare the sweet potato according to the linked recipe. It can be made ahead and reheated before serving.
  • Make the quick pickled onion: Add the sliced red onion to a small bowl. Pour over the red wine vinegar and add a pinch of salt. Toss and leave to sit while preparing the remaining ingredients.
  • Prepare the couscous: Cook the couscous according to the recipe or packet instructions.
  • Steam the spinach: Steam or wilt the spinach until tender.
  • Assemble: Add the couscous and spinach to a serving bowl. Arrange the beef bites, sweet potato, avocado and pineapple around the bowl.
  • Finish: Add the quick pickled red onion and drizzle with the yogurt dressing. Garnish with fresh herbs if using and serve immediately.
