How To Serve

Storage

  • Store in an airtight container in the fridge for up to 3 days
  • Reheat gently on the stove or microwave
  • Add a splash of water or coconut milk when reheating

Lunchbox tip: This works well for next-day lunches and reheats like a dream!

Variations

  • Use chickpeas, cannellini beans, or kidney beans. Consider the cooking time. I used butter beans because I wanted them to roast in the same time as the chicken breast.
  • Swap coconut cream for cream or yogurt (different flavor profile)
  • Add spinach or kale for extra greens.
  • Add chili flakes for heat
