Mascarpone Cheese Dip

This incredibly easy, creamy, and luxurious mascarpone cheese dip that takes just 5 minutes to make is showcasing the diversity of marscarpone cheese. Traditionally used in desserts but it's versatility allows for more savory recipes too.

Equipment

  • 1 bowl for mixing
  • 1 spatular
  • 1 serving bowl
  • 1 Juicer
  • 1 small kitchen knife
  • 1 lemon zester

Ingredients
  

  • 125 grams Mascarpone cheese half a tub
  • 3/4 cup sour cream
  • 3 tablespoons of milk, optional and should be added one tablespoons at a time, if using
  • Pinch of salt or to taste
  • 1/2 to 1 teaspoon lemon zest
  • Extra-virgin olive oil
  • Spices - paprika red pepper flakes, etc. if preferrred
  • 2 tablespoons chopped fresh herbs, parsley, spring onion or basil

Instructions 

  • Mix the Mascarpone and Sour Cream - In a medium bowl, combine the mascarpone cheese and sour cream. Use a whisk or spatula to blend them together until smooth and creamy.
    125 grams Mascarpone cheese, 3/4 cup sour cream
  • Adjust Consistency - If you prefer a thinner dip, add a small dash of cream or milk and stir until the desired texture is achieved. For a thicker, spreadable dip, skip the liquid.
    3 tablespoons of milk, optional and should be added one tablespoons at a time, if using
  • Finishing - Spread the dip out with the spatula or the back of a spoon. Drizzle extra-virgin olive oil, sprinkle with smoked paprika, red pepper flakes (optional) and a pinch of salt.

  • Feel free to add the salt and zest into the mixture before spreading, it's a personal preference and they both work.
    1/2 to 1 teaspoon lemon zest, Pinch of salt or to taste
  • Finish off with fresh spring onions, chopped flat leaf parsley, a little more spice, olive oil and zest.  Serve with crackers and fresh veggies.

Notes

Supermarket mascarpone cheese (tighly packed in a tub) will most likely need a tablespoon or so of milk to help thin it out however, first mix in the sour cream, then decide. Make sure to check the expiry date!
Artisinal mascarpone cheese: Mostly stocked by Italian deli's or specially made in small batches by hand.  No liquid and sour cream needed. Simply drizzle with olive oil if serving as a dip, lemon zest and a sprinkle of red pepper flakes are optional. 
Variations
  • Cream: Instead of milk
  • Black Pepper: To taste, for an added touch of warmth and flavor.
  • Mustard: A little mustard adds a tangy, bold twist for those who enjoy extra depth of flavor.
  • Spices: Add a pinch of your favorite spices (like garlic powder, smoked paprika) we use this one.  
  • Fresh herbs:  Chives, parsley, basil and more.
  • Fresh Lemon:  A squeeze of fresh lemon (taste a little first)
