Preheat the oven to 180 degrees C. Line a tray with foil and place a rack on the tray for the air to rotate which equals crispy skin.
Pat the chicken drumsticks dry.
Mix the seasoning ingredients in a dish wide enough to dip the drumsticks in. Add the flour and baking powder into the seasoning ingredients. Taste and adjust for salt and paprika for heat.
Drizzle the olive oil over the chicken and use your hands to rub it in making sure they well coated.
Coat the drumsticks generously in the seasoning, shake off the excess, hold the chicken drumstick with one hand and sprinkle more seasoning over the parts that need it.
Place them on the prepared rack as you finish each one until done. Spray the drumsticks with cooking spray giving each one a generous spray. Bake for 30 minutes and halfway through, rotate the tray and increase the heat to 220 C and continue baking for another 10 minutes. Check them and if you think they can go another 5 minutes then let them otherwise no longer.
