Wash, trim, peel, and slice beetroot into even rounds or half-moons.
Place beetroot in a bowl and toss with olive oil, salt, pepper, and red wine vinegar.
Arrange in a single layer in the air fryer basket.
Air fry for 8–10 minutes, shaking halfway, until tender with lightly caramelized edges.
Serve warm as a side dish or appetizer.
