Instructions
Steam the Couscous: Place the couscous in a bowl and pour enough boiling water over it to just cover. Cover the bowl and let it sit while you prepare the rest.
Sauté the Aromatics: In a frying pan, heat olive oil over medium-high heat. Add diced onions and sauté until soft and fragrant, about 5 minutes. Add minced garlic and cook for 1 more minute. Remove from heat.
Mix the Flavors: Fluff the couscous with a fork and add it to the onion-garlic mix. Stir in the chili oil and curry paste or chili sauce. Mix thoroughly
Soft-Boil the Eggs: Bring a pot of water to a boil. Carefully add eggs and boil for 6 minutes. Transfer immediately to an ice bath to stop the cooking. Peel and slice.
Assemble: Serve the spicy couscous topped with the soft-boiled eggs.
