Spicy Couscous With Soft Boiled Eggs

Ingredients
  

  • 1 cup Moroccan couscous
  • Boiling water to cover the couscous
  • 2 small red onions, finely chopped
  • Olive oil (for sauteing)
  • 1 tablespoon crunchy chili oil (e.g. Woolworths brand)
  • 1 tablespoon chilli paste or any store-bought chillli paste
  • 2 large eggs

Instructions 

  • Steam the Couscous: Place the couscous in a bowl and pour enough boiling water over it to just cover. Cover the bowl and let it sit while you prepare the rest.
  • Sauté the Aromatics: In a frying pan, heat olive oil over medium-high heat. Add diced onions and sauté until soft and fragrant, about 5 minutes. Add minced garlic and cook for 1 more minute. Remove from heat.
  • Mix the Flavors: Fluff the couscous with a fork and add it to the onion-garlic mix. Stir in the chili oil and curry paste or chili sauce. Mix thoroughly
  • Soft-Boil the Eggs: Bring a pot of water to a boil. Carefully add eggs and boil for 6 minutes. Transfer immediately to an ice bath to stop the cooking. Peel and slice.
  • Assemble: Serve the spicy couscous topped with the soft-boiled eggs.
