These easy air fryer sweet potatoes are crispy on the outside, tender inside, and topped with pumpkin seeds and fresh herbs. A simple side dish ready in 20-30 minutes.

Ingredients
  

  • 2-3 medium sweet potatoes washed and cubed
  • 1-2 tablespoons extra virgin olive oil
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 1 teaspoon spice blend of choice optional
  • 2 tablespoons pumpkin seeds
  • fresh herbs for garnish (parsley, thyme, or rosemary)

Instructions 

  • Preheat the air fryer to 200°C (400°F).
  • Wash and cube the sweet potatoes into evenly sized pieces.
  • Place the sweet potatoes in a large bowl and toss with olive oil, salt, black pepper, and spice blend if using.
  • Add the sweet potatoes to the air fryer basket in a single layer. Cook in batches if necessary.
  • Air fry for 20–25 minutes, shaking the basket halfway through cooking.
  • Add the pumpkin seeds halfway through roasting.
  • Continue cooking until the sweet potatoes are tender and lightly caramelized.
