HOW TO MAKE THIS BEETROOT PUREE
Just as the recipe says 1 ingredient that's how easy it is! I mean it, and just to show you that you really don't need to add a host of other ingredients here is a cake batter (image below) to which I added 2 tablespoons of beetroot puree. It gives your cake a stunning color and depending on how strong a red you want it, you will add or lessen the puree.

This ombre cake used this exact puree and it works like a charm. It adds it's own dimension of density and texture to the batter that you cannot get with anything else! I have used beetroot so often and recently posted these Beetroot Pancakes With Almond Flour (Gluten-Free) and this Almond Flour Cheesecake
The water is purely to get the beets going in the blender and you also don't need a lot so start with a tablespoon and work from there depending on how long your blender gets the beetroot into a puree.
