You probably have your own easy green salad that you make all the time and this is mine, however, you might want to try something different so here I present to you this satisfying green salad.
If you're having a Chicken Roast as we were last night then this salad and dressing will take you all of 15 minutes to make. Tastes amazing with the chicken. So whether you're having a store bought chicken or some homemade steaks on the grill this easy green salad is fabulous.
Ingredients
Let's have a quick read through what you will need and what you can substitute:
Lettuce- please use whatever lettuce you prefer its not important
Romano Tomatoes - I love Romano tomatoes but they're not always available so I snatched them up when I found them. However, any tomatoes will work.
Feta Cheese - I would suggest plain feta as opposed to the peppered one if you're using our Smell and Taste Salt & Pepper seasoning so it's not over salted and peppery.
Fresh Mozzarella Balls - Optional so if you cant find any leave them out.
Baby Spinach - The only reason I add fresh spinach to this green salad is because its a preference of a bit of diversity and texture. Just lettuce all the time can get a bit old. Besides, it looks attractive ๐
Red Onion - Adds a little bit of sweet crunch and is good for us! If the strong taste bothers you, simply soak it in water for a few minutes to alleviate the burn.
Salad Dressing
This salad has loads of the good stuff in so you can serve it with a light vinaigrette. Keep any leftovers for brunch the next day and serve with some toasted crusty bread.
Now's the time to change up the dressing and make it a whole new meal because it is. You can make this dressing in a few minutes, it's a thick but pourable consistency and the fresh basil is something else in there, absolutely gorgeous!
Crusty Bread
There's not much introduction here except that most people won't say no for crusty bread especially when it's grilled golden brown and acts a filler if you're wanting to have this green salad as your mains.

Confession: You can toast your bread on a grilling pan or in the oven without any olive oil and it grills perfectly. I was a little extra here and added a teaspoon of olive oil to brush over the bread - okay a tablespoon maybe ๐ As good as it is it's not necessary especially when you watching calories ๐ however, there are times when you know your body needs it so moving on....olive oil will smoke on a high temperature just so you are aware. Lower the heat if you have time or let it smoke and grill your bread!
Serving Suggestions
This simple green salad makes the perfect side dish at a braai (barbecue) with great steaks, light lunch, serve it with this Chicken Sandwich Recipe, or with a roast mains dish. We love it with Pan Seared Steak and Turmeric Chicken & Potato Roast
No matter how you serve it this salad also holds it's own as a light lunch or with crusty bread!
Herb Mix

Suggestions
Not many, except to start with the salad dressing, leave it in the fridge while you make the green salad. If you find that the salad dressing is a little thick simply add a tablespoon of fresh lemon juice or purified water to thin it down a little.

Simple Green Salad
Ingredients
- lettuce
- spinach
- 2 medium size fresh tomatoes
- red onion
- handful of rocket
- 1 yellow 'snacking pepper' or ยฝ regular size pepper
- 1 teaspoon olive oil
- 1 fresh lime thinly sliced
- feta cheese
- fresh mozzarella balls optional
- thick crusty bread
- ยฝ teaspoon Smell & Taste Salt & Pepper Basics collection
- ยฝ teaspoon Smell & Taste Garlic & Herb Spice and 1 teaspoon olive oil for bread
Yogurt and Basil Salad Dressing
- ยฝ cup yogurt lactose free used here however any yogurt
- ยผ cup olive oil extra virgin
- 2 Tbsps sour cream
- 2 Tbsps Djon mustard
- 1 fresh green chili sliced
- ยฝ teaspoon Smell & Taste Salt & Pepper Mix
- 1 clove of fresh garlic
- fresh basil. about ยฝ handful
- decorate with a sprig of fresh basil or mint
- 1 juice of fresh lemon
- extra juice if needed or you can use a tablespoon of cider vinegar for those who can use it.
Instructions
- Start by adding all the dressing ingredients into a blender, blend well to combine, taste for seasoning and set aside in the fridge till ready to use. If you like a bit of sweetness add a teaspoon of honey. For more acidity, add the fresh lemon juice or a teaspoon of cider vinegar.
- Prepare the salad by adding the lettuce, tomatoes, onion, spinach, rocket, snacking peppers, Smell & Taste salt & pepper and a tablespoon of olive oil. With clean hands, lift and toss combining all the ingredients. Add the sliced lime, break feta block into the salad, tear fresh mozzarella balls (optional). No mixing after the cheese is in. If necessary use a fork to tidy the cheese across the salad so it's equally divided and gives good presentation if serving on a platter or bowl. Otherwise, use your clean hands to simply heap it into a bowl.
- Add the toasted crusty bread and serve. Enjoy! Miranda xx
