There really is nothing more to a great chicken dish than spices the correct oven temperature along with things like using room temperature chicken. Those are the fundamentals in obtaining tasty chicken and this oven baked chicken drumstick recipe is no different with the focus mainly on chicken spice with one or two other ingredients to create the crispy skin.
Spice Flavoring
Let's start with the crispy skin and how we get there?
First we need 13 Spice for all your chicken dishes and this can be found here. To this chicken spice we add the two ingredients to ensure crispy skin and those are flour and baking powder (a nice trick I learned from my favorite cooking show except they used baking soda). I must admit that I was expecting more crunch in the skin so I amended the spice combinations to create more flavor since the crisp was less than expected.
The chicken meat is so soft and the skin so flavorful it really is a small price to not have the most crispy skin! Still a lot better than limp skin with no flavoring and dry chicken meat right?

Tip: If you find that the flour changes the taste and texture of the chicken spice simply add a teaspoon of our Vegetable spice (another winning purchase!) and 2 teaspoons of the Paprika Spice. The combination of these will give you a well seasoned spicy not hot crispy coating.
Are There Any Substitutions
If substitutions is the right word it still does not justify the taste of the above spices, however here is an alternative method;
I hate to call them substitutions because our spices and seasoning are well developed blends that are created by drying fresh vegetables and using 100% pure spices. However, should you not have the opportunity to purchase them then use another chicken spice with the flour and baking powder.

How To Make These Oven Baked Chicken Drumsticks
This is a quick recipe and most of the time the drumsticks are in the oven baking so that leaves you with prep;
Mix the spices in a round dish and pat the drumsticks dry. Dip each drumstick into the spice blend and place them onto an oven dish with a rack. Use foil at the bottom of the tray it makes it so convenient for clean up you will thank me later!
The drumsticks placed over the rack and not directly onto the bottom of the tray allows the drumsticks to cook all round and create rotating hot air = crispy skin!

If you bite into them you might not make it to making any sides, they're so good you might skip on the sides! However, if you do want some inspiration try these;

Oven Baked Chicken Drumsticks
Ingredients
- 1.5 to 1.7 kg chicken drumsticks
- 2 tbsps. olive oil
- cooking spray
Spices and Seasoning
- 2 tsps Chicken spice
- 1 teaspoon Vegetables spice
- 2 tsps. Paprika Spice
- 1 teaspoon Salt
Other
- 2 tbsps flour
- 1 teaspoon baking powder
Instructions
- Preheat the oven to 180 degrees C. Line a tray with foil and place a rack on the tray for the air to rotate which equals crispy skin.
- Pat the chicken drumsticks dry.
- Mix the seasoning ingredients in a dish wide enough to dip the drumsticks in. Add the flour and baking powder into the seasoning ingredients. Taste and adjust for salt and paprika for heat.
- Drizzle the olive oil over the chicken and use your hands to rub it in making sure they well coated.
- Coat the drumsticks generously in the seasoning, shake off the excess, hold the chicken drumstick with one hand and sprinkle more seasoning over the parts that need it.
- Place them on the prepared rack as you finish each one until done. Spray the drumsticks with cooking spray giving each one a generous spray. Bake for 30 minutes and halfway through, rotate the tray and increase the heat to 220 C and continue baking for another 10 minutes. Check them and if you think they can go another 5 minutes then let them otherwise no longer.
