Not a shred of meat in any form, chicken, tuna, bacon, Italian sausage? Now I bet I've got you thinking of adding all those in if you like meat 🙂 but wait, give this rice bowl a chance because you won't miss a thing! That and your body will thank you for it.
Rice cooked in a spice sauce with stock or wine whichever you prefer that adds flavor upon flavor! Sliced avocado, slices of lemon or lime, avocado dressing, cheese and served with a side of rocket or spinach. The options are endless however let me tell you how I made this bowl and it was so good.
Avocado and Rice Bowl
I won't go into how underrated rice is yet it has endless recipe ideas, is affordable and can feed an army so to speak. Now take that humble rice add some spicy wine/stock flavors, toss in parmesan cheese and you already have a meal.
Choose a light and fluffy yet long and grainy rice like basmati. It's really quite perfect and easy to prepare. If you want to know how to cook basmati rice I have you covered.
How To Flavor The Rice
Like all good food starts, onion and garlic in oil and let that onion cook for a good 8 to 10 minutes before adding the garlic. Let it sweat, make sure your heat is not high so the onion doesn't burn otherwise use another onion.
Toss in your spices let it cook for about a minute or 2, add a dash of white wine. You can add stock if you don't want to add white wine although it changes the concept of this recipe. What is the concept? To not make soup. Okay?
We are not making soup we are making a flavored rice dish with extra goodies for comfort and greens on the side so we feel a little healthy! Okay, so I would suggest go with the wine rather.
You don't taste the wine it evaporates and adds flavor so don't worry about drinking wine because you're not.

You might be wondering how does avocado dressing go with a spicy rice bowl? Well, in the same way a curry goes with a dollop of yogurt so let's get to the basis of this dish which is rice!

Tips, Suggestions And Alternatives
Try and use bright clean avocados as in no one has been pressing the life out of them at the supermarket! Don't you hate when people do that? Why would you press the avocado and then leave it there for someone else to buy? Rude.
A crumble of feta cheese is tossed over this rice dish and if you don't mind feta then don't leave it out because it brings a great dimension to the rice and avo.
You can also use rocket instead of baby spinach leaves but after the feta I thought to play it safe with spinach rather in terms of the different tastes 🙂 You really don't need much at all, a couple leaves is all.
Not much is needed this bowl is already deliciously satisfying!
Avocado and Rice Bowl
Ingredients
- ½ onion finely chopped
- 1 garlic clove minced
- 1 tablespoon tomato paste
- 1 tablespoon Smell & Taste Spice Paste
- ¼ cup white wine
- 2 tablespoons oil
Veg and Dressing
- 1 ½ avocado's
- 1 cup baby spinach
- ¼ cup feta cheese 1 of those blocks from the feta container
- ½ teaspoon salt and pepper or to taste
- Parmesan cheese
- avocado dressing
Instructions
- 1 x Recipe Cooked Rice
- 1 x Recipe Avocado Salad Dressing
- Heat a non stick pan and cook the onions for 8 to 10 minutes on medium. The onion must sweat before you add the garlic. If they start sticking to the pot, lower the heat.
- Add the garlic, tomato paste, Smell & Taste spice paste (if using) and the white wine. Add salt and pepper and cook for 5 minutes on simmer.
- Add the cooked rice and gently combine using a spatula to spare breaking the rice grain.
- Serve with sliced avocado, baby spinach leaves, crumbled feta, parmesan cheese, avocado dressing and seasoning.
