How To Clean Whole Pumpkin Or Butternut?
This method is whether you are air frying your pumpkin or oven roasting.
- Wash the pumpkin to remove any dirt on the outside and dry with kitchen tissue paper or kitchen towel.
- Place it on a firm board/work surface and you need a sharp large knife to get throught the skin, so a steady knife is good. For butternut, you can slice it in half, clean the inside and bake with the peels on too.
- Hold the pumpkin with one hand (to keep it steady and not rolling) and with the knife in the other hand cut through the pumpkin. Depending on the pumpkin or butternut I prefer cutting the easiest shape I that it will give me. Sometimes it’s easier to cut lengthwise.
- Remove the seeds and fiber with a spoon and then slice the pumpkin peels off. When you are left with just the slices, you can cut them into cubes, place them into a container or Ziploc bag in the refrigerator/freezer.

How To Roast Pumpkin In The Air Fryer
- Set the air fryer setting to preheat for 5 minutes. If your air fryer has no preheat setting, simply start it and let it go for the same time. Preheating the air fryer gets the basket nice and hot before you add the food.
- This fresh pumpkin roasts for 20 minutes in the air fryer 400°F/ 200°C.
- In a large bowl add the pre-cut pumpkin wedges and use paper towels to pat them dry. Add olive oil, salt and pepper and spices. I used salt, pepper, our Involtini spice and ground cinnamon but you can use any seasoning from kosher salt, garlic powder to chili and vegetable spice. Toss well until all the cubes are coated.
- Transfer the pumpkin to the air fryer basket in a single layer. If you have lots of pumpkin pieces do this in batches because you don’t want the pile the pumpkin over each other. You can but it won’t give you even cooking and caramalised edges everywhere.
- Air fry the pumpkin for 15 to 18 minutes or set the air fryer for 20 minutes and then halfway through pull the basket out, give it a shake and check how brown or caramalized you want the edges. You can always take it out before the 20 minutes if you're happy with it.
- Transfer the roasted pumpkin to a serving plate and enjoy!
- Garnish with more spice or sea salt, fresh black pepper, roasted sunflower seeds and even some chopped fresh parsley!

How To Oven Roast Pumpkin
If you want to make this roasted pumpkin recipe but don’t have an air fryer, then you can definitely make it in the oven!
- Preheat the oven to 220°C/428°F and add the cubed pumpkin pieces onto a baking tray (sheet pan).
- Season well with salt and pepper or your favorite vegetable spice and a drizzle of olive oil.
