Jam Puff Pastry Tarts
Especially wonderful over the festive season, these bite-sized puff pastries are equally festive all year round. Simply add a sprinkle of sugar and fresh rosemary. A convenient appetizer or after dinner dessert with no need for cutlery or crockery!
When it comes to puff pastry, the ideas are endless and anything for that buttery pastry is reason enough to make these pastry jam tarts.
This sweet treat uses store-bought pastry dough, and you can use your favourite jam or in season, cranberry sauce. I found a jar of blueberry and merlot glaze in my holiday groceries that I ended up using here. Some have jam while the others have a glaze and jam.
Ingredients For Easy Jam Tarts
To make these wonderful brie bites, you will need:
- Brie: Any brie cheese works for these bites.
- Puff Pastry: Store-bought puff pastry dough for the sheer convenience! At your local grocery store’s freezer section is where you can find pre-made puff pastry.
- Jam: Use your favourite jam for this easy dessert. There's so many to use, raspberry jam, strawberry, apricot and my favorite blackberry and fig jam.
- Sea Salt: Add a small pinch of sea salt to the end of your cranberry Brie bites.
- Fresh rosemary spriggs: A pop of color and festivities!
How To Make Easy Jam Tarts, Step-By-Step Instructions

Step 1: Preheat The Oven
Preheat to 195° C / 383°F and line a baking tray with parchment paper or use a silicone baking mat.
Step 2: Roll The Dough
Unwrap the pastry and place it on your work surface. I like a little sprinkle of flour on the surface when working with pastry to ensure no sticking. Cut out small squares, it worked out to approxiamately 35 or so little squares. Brush the squares with the egg wash.
Step 3: Double The Pastry Squares
Make them all double by placing one square over another. Now you should have approxiamately 17 or so doubles of square puff pastry shapes.
Step 4: Bake The Pastry
Place the pastry squares on the prepared baking sheet and bake for around 8 minutes or until a light golden brown. 9 to10 mintes may be necessary but not always, so check yours and when golden brown, remove them from the oven.
Step 5: Cool and Slice
Once the puff pastry squares are cool, gently cut through each one. Add a a teaspoon of jam or cranberry sauce and place the top back on so they close and become a square again. Slice the brie into small slices that fit onto the pastry squares and place them on top of each square.
Step 6: Finishing Touches, Garnish and Serve
Add another generous blog of jam or cranberry sauce over the brie cheese, one at a time. Place them on a serving platter and add a sprigg of rosemary or thyme with a sprinkle of icing sugar (powdered sugar) and serve.
Pro Tip!
- Although you can add as much jam as you want, remember that these are small bites so overloading them may weigh them down.

Recipe Notes
- Defrost the puff pastry dough overnight in the fridge and then leave it on the counter for 30 minutes beofre using it. Remember that puff pastry is made with butter so if you let it thaw too long, it won't puff up as it's meant too.
- You might be tempted to overfill the cheese and jam, don't because the pastry is very delicate and it can collapse underneath. The jam will also start to overflow while it bakes.
Storage
Store in the fridge in an airtight contaier for up to 4 days. Reheat in the microwave on 20 to 30 second blasts until warmed through.

Is It Necessary To Remove The Brie's Rind Before Baking?
No, there is no need to peel the rind. Since the rind of the Brie is completely edible and has a mild flavor, we leave it on. You can remove and dispose of the rind if you would like.
Can I Make Pastry Jam Tarts Ahead?
These are so convenient make ahead option appetizers. Yes you can store these jam tarts in the refrigerator for up to 3 days. To maintain freshness and keep them crisp, I would suggest rolling out the pastry, cutting and baking. Refrigerate without the jam or cranberry sauce in an airtight container (or they lose their crunch). Add the jam and cheese before serving but first pop them into the oven 190°C/375°F until heated through. Leftovers with jam can be stored in the refrigerator for up to three days in an airtight container.
What To Do With Leftover Puff Pastry?
- Make little pinwheels
- Sprinkle with cinnamon sugar and twist into little rope shapes
- Use the leftover bits to add crumble over the top of your next raspberry tart!
- A tart recipe is not all you can make, use your left pastry sheets for quick bakes with savory fillings.
