A summer plum salad with pecans, thinly shaved cucumber, leafy greens and a gorgeous Mediterranean salad dressing that uses friendly ingredients and delivers powerful tones.

I am very happy to be sharing this recipe with you because the creativity was spontaneous and simple! That, and the taste is exactly what was needed! The salad dressings delivered tones of a little sweet, tangy, sour and that tied into a mouthwatering salad!
SOUTH AFRICAN PLUMS
South Africa is internationally known for the high quality plums and since their season runs officially from November to about the end of February there's a need to use this beautiful oval shaped fruit up. Do you know that with all the plums grown in sunny South Africa only 20% are sold locally? The rest are all shipped and exported across the ocean to Europe and the UK which account for the largest followed by the Middle East, Russia, Far East and Asia. Reference linked here.

SALAD DRESSING
This is the most exciting part of this salad! Yes the light greens with shaved cucumber are great on their own and the Pecan nuts add that crunch and almost fatty taste on the inside. Did you know that pecans contain monounsaturated fats such as oleic acid along with phenolic antioxidants which help reduce the risk of heart disease? I did not, but after reading this article I now know something new.
The salad dressing couldn't be easier and more delicious! Simply add all the dressing ingredients into a blender and all you have to do is adjust the taste accordingly. I have shared a short reel of the making of this salad dressing on my Instagram reels too!

Plum Salad With Carpaccio and Pecans
Ingredients
- 2 plums pitted and thinly slice (ripe plums!)
- Springbok carpaccio a few slices as necessary
- leafy green lettuce
- ½ cucumber thinly shaved or sliced
- ½ cup pecans roughly chopped
- salt and pepper
- 2 tablespoons balsamic vinegar
Peppadew Salad Dressing
- ¼ cup Peppadew
- 1 tablespoon Dijon mustard
- ¼ cup Feta cheese
- ½ Fresh lemon juice
- salt and pepper to taste
- 2 tablespoon Extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 2 tablespoon water
Instructions
- Start by toasting the pecans (if toasting) in a non stick pan until they are a shade darker, set off a wonderful aroma and then set aside to cool. Once cooled down roughly chop and use to add onto the salad after assembling it.
- Wash the plums, remove the pit and slice into half moon shapes. Set aside.
- Assemble the lettuce and cucumber after prepping them (rinse, slice etc ) on a large enough platter or salad bowl.
- Add the sliced plums and pecans with the lettuce and cucumber.
- Pour a drizzle of the balsamic vinegar over the entire salad. Season with a touch of salt & pepper mix.
Peppadew Salad Dressing
- Add all the ingredients into a blender, whizz until smooth, taste to adjust to your preference.
- Serve over salad with pecans. Enjoy! Miranda, xx
