Pasta Pronto is an easy pasta recipe and it means “Quick Pasta” because this recipe takes less than 10 minutes to make. I wanted to call it Speed but then I thought I might confuse everyone including myself thinking it was a movie😉

If I told you that this pasta took me 7 minutes to make I know that you won't believe me but it did. Let's call it pasta pronto, a quick pasta rather than a 7 minute pasta it's more believable.
This recipe serves one person and uses 100 grams of uncooked pasta. To serve more than one person use the scale in the recipe card below.
I know that recipes are usually written for families of 4-6 and larger groups but sometimes you need to cook for one. I have another one serving recipe on my blog Oats Recipe for One.

Pasta Pronto
Ingredients
- 100 grams spaghetti per one serving
- 2 Tbsp. olive oil
- ½ red onion finely diced
- ¼ teaspoon Calabrese Spice and more for sprinkling
- ¼ cup cherry tomatoes
- olives drained
- shaved pecorino for serving optional and a fresh green herb like basil or Italian parsley, chopped
Instructions
- Use kettle boiled water for the pasta for quicker boiling water.
- Add salt into the boiling water and add the spaghetti. Let it cook without the lid but if your stove is slow put the lid on in a slant position it will help it cook faster there's no water overflow.
- Heat a non stick pan with the olive oil on medium to high heat and cook the onions till soft (a minute or so). Add the garlic, tomatoes and Calabrese spice., Mix to combine, add the olives and lower the heat.
- Move the cooked pasta over with a pair of tongs. When you are moving the pasta it will come with it's own pasta water so don't be in a hurry to add the pasta water. You probably wont need any.
- Mix the lot for a minute and serve immediately with a sprinkle of Calabrese Spice.
