Pomegranate parfait uses fresh pomegranate seeds (arils) and is a simple dessert like a berry parfait.
A lot of recipes say use plain Greek yogurt but honestly, you can use any yogurt for a breakfast parfait.
Not only for breakfast, make this treat for lunch, dessert, brunch or a snack.
Before we get to layering this sweet treat, let's talk about the glass type.
Use any glass yes, BUT the shorter glasses make a smaller yet satisfying amount.
The taller glasses make it difficult to get spoonfuls without making a mess.
Long glasses when making parfait can be difficult to layer if making it for presentation.
My personal choice is a short glass with a wide brim. Even stemless wine glasses can be a little too narrow on the top.

It's always best to use seasonal fruit. Swopping honey (any) for maple syrup.
I also sometimes blend the berries into blueberry purees and use it as a base.

Make this ahead and store it in the fridge and just before serving, pop on a fresh strawberry, chocolate nibs, organic coco powder and a drizzle of honey.
Talk about a head-turner! (I was talking about the parfait, she says with a wink😉)

If and when you do, find pomegranate arils, buy them! They add such a pop of color and moutwatering little bursts in your mouth as you dig in.

As mentioned, a few ingredients to make a sensational yogurt berry parfait.
Plain yogurt: Greek yogurt is thick and creamy so if you cannot find it, use any other thick, creamy yogurt. In this recipe, I am using an organic low fat yogurt. Yes, low fat and it was delicious!
If it's healthy you are looking for, any yogurt that's unsweetened.
Granola: You have to love the crunch in granola! Its also a very good source of fiber with a whole lot of nuttiness that we love. Store-bought or homemade.
Berries: Fresh strawberries and fresh blueberries. It's not only that fruit costs a fraction when in season but it also has more natural flavors.
Honey: Raw honey is a great option.

Wash all the berries and pat them dry using kitchen tissue paper or kitchen towel.
Thinly slice the strawberries, leaving one whole for each glass to garnish later.
To Layer the Parfait
In a short glass, carefully add generous spoonfuls of yogurt to the base of the glass. In cup measurements, about a third of a cup (or less if you like).
Over the yogurt, if you prefer a little more sweetness, drizzle a small amount of honey over the yogurt.
Add a layer of blueberries which will be roughly a cup blueberries.
Sprinkle granola followed by sliced strawberries. Keep going with the layers until you reach the top.
Finishing Toppings / Serving
Drizzle of honey, add strawberry slices, a fresh mint leaf, coco nibs and a dusting of natural coco powder.
Note: If in season, pomegranate arils in-between the layers give a pop of color, a little sweetness and a little tartness to the taste.

Use high quality ingredients making fresh and seasonal you first choice.
Greek yogurt is not alway easy to find depending on where you are.
Use your favourite type of yogurt as long as it's a fairly thick plain yogurt.
Homemade granola is so much better than any store-bought and it takes a few short minutes to make your own!
If you can, use raw honey for a healhier option.
A touch of vanilla extract is always a pleasant idea.
These stunning yogurt parfaits can be made a few hours ahead. Keep refrigerated and covered.
Add 3 layers if you prefer in a large glass for a triple berry parfait!

Variations Yogurt Parfait
Remember when I mentioned earlier that Ive been making these all through the winter?
I wasn't joking so here are some variations to this recipe.
Cream cheese: Use mascarpone cheese for a delicious mousse type dessert.
Add chocolate: Add dark chocolate pieces to the granola mix.
Add nuts: Mix toasted pecans and pistachios (or walnuts) into the granola mix (if not already in your granola).
Add almond butter: Add a tablespoon of almond butter between the layers. Each time you scoop up the parfait, you get a nutty texture of delicious!
Dairy-free: There are many varities of dairy-free yogurt (coconut) that you can find in grocery stores.
Sweetness alternatives: I love coconut sugar or brown sugar instead of honey for a change.
Add dried currants into the granola if not already there.
Other variations: Add a teaspoon of chia seeds into your yogurt parfait, or a turmeric based powder. A little cinnamon for a lift in spice flavors.
