This Italian antipasti is one of those brilliant serves that never lets you down, never fails to impress and always has everyone smiling!
It's the beginning of all things wonderful in terms of good food, conversation, wine and a taste of what's to come. This is a recipe that (if you can call it a recipe) you should have in your in your mental recipe repertoire!

Antipasti or Antipasto?
This was a constant debate in our house, what's new it was about food. Antipasto vs antipasti and when it was being used correctly. This was a matter of insanity really because the person I was arguing with was in fact, my husband, who is Italian. You would think that simplified it for me? Nope! I was more confused each time he explained it until one day.
The day I realized that they mean the exact same thing. That was sufficient acclaim for me to relinquish the possibility that I was perhaps difficult at understanding. Such a relief!
It was the Italians who were complicating this - not so far off there I must admit????
I was always confused about the male and female in the Italian language and then I had the singular and plural to deal with, it's a lot.
Anyway, 'antipasto' is the singular of the word and 'antipasti' is the plural. So even though technically they are both correct, grammatically they are not.
This recipe grammatically is an antipasti because it has more than one item on the plate, but wait.... it is in fact an antipasto because there is just one plate with a variety of eats while there needs to be more than one dish with eats - hahahaha - the confusion is real. So please join me for some selective Italian eats in this Italian Antipasti dish.
You probably also more confused. Let's make antipasti that's too fabulous to not make!
Italian Antipasti
This serve is generally made up of what you have available and that's the beauty of it, you can add typically what your family eats. A few examples:
- Roasted Tomatoes & Bell Peppers
- Olives
- Bread
- An assortment of cheese

This may appear as a regular platter to most or think of it as a way to get all your favorite nibbles onto one plate and enjoy. That's what platter's are right? For Italians however it's not just a platter, it's a choice of particular bites that can go on that platter.
It's a custom, a traditional cuisine, a cultural ritual, a start to a meal, something to wet the appetite more like an aperitif or rather an aperitivo which is there to enhance the appetite.
I remember often wondering how can a platter of bites enhance the appetite when I would be full by the time the meal came anyway? That was until I learnt that you shouldn't eat everything on the platter but more a case of tasting. (I've forgiven my young self then)
Have you ever ordered a crostini in a restuarant? There's a reason why it's on the starter menu so let me leave the kiddies menu alone and come back to my antipasti.

Italian Antipasti
Ingredients
- 350 grams roasted tomatoes with juices
- 6 roasted bell peppers
- 2 tablespoons artichoke reserve the oil and use for drizzling later
- 3 tablespoons olives
- 6 slices prosciutto salami or both
- 200 grams fresh mozzarella balls roughly torn
- crusty bread
- ¼ cucumber rinsed and sliced
- ¼ cup fresh parsley torn apart
- 1 tablespoon extra virgin olive oil.
Instructions
- Place the roasted bell peppers on the edges of the plate with the juices that they come with from roasting.
- Rinse and slice the cucumber and roughly tear the parsley and add into the bowl with the tomatoes to incorporate the juices of the roasted tomatoes.
- Add the tomatoes and cucumber mix onto the plate on the opposite side of the plate, reserving some of it.
- Add the fresh mozzarella randomly across the plate, followed by the artichoke, prosciutto, olives and the remaining tomatoes/cucumber.
- Add a light sprinkle of fresh black pepper & salt and a drizzle of olive oil over the fresh mozzarella cheese.
- Serve with crusty bread.
- This is an example of what you can add to your antipasti platter but of-course the selection and quantity is your choice. Enjoy.
