EASY ORECCHIETTE PASTA RECIPE - SUPER SIMPLE AND AMAZING!
Who is always keen for a quick and easy meal? And who is always keen for a quick, easy and delicious plate of pasta? I am hoping that would be you because if it is, you are in the right place friend!
Let's kick off with this pasta that is quite literally SUPERB and on the table in 18 minutes!
ITALIAN SAUSAGE
Italian sausage is primarily flavored with spices, filled with pork mince and of course fennel the main ingredient. Like all homemade food the best part is being able to control the quantities and the ingredients. Store bought sausages run quite high in fat, calories and sodium and they are also not friendly to those with cholesterol issues because just like salami, Parma ham and most (or all) other foods they are processed.
As much as I recognize that processed foods or canned foods like this red kidney beans are not 100% healthy but as long as it's an occasional meal it really is fine. Besides, I can think of many other foods and drinks that are not good for you than beans and sausage. When you are using them, try and get the best products and then enjoy your meal!
INGREDIENTS
- Pasta
- Spinach
- Italian Sausage
- Mascarpone Cheese (that creamy goodness of mascarpone)
- Red Kidney Beans
- Parmesan Cheese
In saying that, if you have a reliable butchery where you can be specific about your order of sausages or whatever meat cuts you're looking for you must might be able to get away with half of the above set backs. Except for cold meats, that's processed you have to take it or leave it.
EASY orecchiette PASTA
Fresh orecchiette or store bought?
A bit of silly question because food is always best eaten fresh. Do we always eat only fresh pasta, absolutely not. It's wonderful, easy to make and so much better to eat but there are also some extremely great brands of pasta for days when you just want to eat and you want to eat now not in an hour. And that's okay. Sometimes you need to have dinner on the table 15 minutes ago and that's when your pantry staples come in handy just like this pasta. Store bought and tasted amazing!
I remember my mother in law (and in Italian the words mother in law is "SU-O-CE-RA".) when she would make heaps of orecchiette which when translated to English actually means 'small ears' Italian to English so crazy right 🙂
HOMEMADE ORECCHIETTA PASTA
The pasta dough that was very thin got shaped into what could resemble a finger and that would be shaped by means of very swift hand movements into orecchiette. This process was delicate but quick and the she would create the most perfect orecchiette. We still need to put up a homemade orecchiette post because every time we make it, it's gone in minutes. Hopefully the day we make it, it can look half as good as mother in laws because although I've made it a 100 times over the years it never quite measures up to what I know it should look like and taste like. So when my husband makes it, then for that meal, I am brought just a little closer to what she did it like. So, next assignment for him, homemade orecchiette pasta please 🙂
WHAT PASTA BRANDS ARE THE BEST
Your choice of pasta brand that works for you is the best. If it cooks in the allocated time as it says on the package and the results are exactly as you want them. It should be al dente 'to the tooth' in texture and if you remove it 4 minutes earlier to finish cooking in the pan just like when I made this 7 Minute Pasta Pronto then it should not be over cooked. Light and with an easy flow.

Orecchiette Pasta Recipe - Super Simple and Amazing
Ingredients
- 250 grams Orecchiette serves 3 to 4
- 500 grams Italian sausage
- 1 teaspoon Our Calabrese spice - Smell and Taste
- Bunch of baby spinach
- 400 grams Red kidney beans canned organic
- 2 tbsps Extra Virgin olive oil
- Salt for the pasta to taste
- 300 grams Mascarpone cheese
- Parmesan cheese grated when serving
Instructions
- Heat the water for the pasta, once boiling, add salt to taste, add the pasta and cook until 'al dente' (to the tooth) or according to the packet instructions.
- Heat a non stick pan and cook the diced onion.
- Add the sausage, cook till a slightly braised.
- Add the Calabrese Spice and mix it in well.
- Add the chopped baby spinach and mix it in, cook for a few second just till it's a little wilted
- Add the mascarpone and gently swirl it all together
- Once the mascarpone has melted in completely with the sausage and spinach.
- Add the canned, red kidney organic beans and mix it all up.
- Add the cooked orecchiette pasta and enjoy!
