This flatbread pizza is a no yeast, no-knead dough with a thin and crunchy crust that will make you want to get straight in for a pizza bite! Don't like a thin crust? No problem! That's the beauty of the dough, you can have it thick or thin, round or rectangle with your favorite toppings. You know those pizza's that take 10 minutes to make? This is not one of them. This dough needs to rest for 30 minutes to allow for easy rolling out and you will love the texture!
Everyone loves homemade pizza but this pizza is just a little extra special because it's so much quicker to make and the thin crust yields all that extra crunch! In terms of topping, we've never liked our pizza's over-loaded so that worked in my favor because this crust is too thin for a heavy topping.
TOPPINGS
Mozzarella - there are so many different cheese types to go with but I do find that Mozzarella works best with pizza although I also like a sharp cheddar cheese on mine even though I try not to let my husband hear me because you know, 'Mozzarella' is the best. It is but I'm also all about a little cheddar love sometimes 🙂
Bacon - I don't know what to say, it's bacon friends.
Fresh Tomatoes - Mix it up! Big ones, small ones, rainbow colors it all tastes juicy and flavorful.
Fresh Basil - You can use fresh basil on top after the pizza comes out the oven but who really eats it though? Or does it get tossed into a delicious basil pesto? If so, then by all means yes toss it in for a pesto! But if not, then it really just goes to waste that's why we decided to have it on the pizza before it baked. It turns a darker shade of green and you may think it's burnt but it's not and the taste is insanely good. It also crisps up so you can hear the crunch when you bite into it. Let me tell you how I do it.
Fresh Basil - Take a bunch like half a handful and tear them into a small bowl. Add olive oil, - Smell and Taste - Salt & Pepper and spread randomly onto the pizza and bake. You can even add halved cherry tomatoes into the oil and basil mix. Enjoy!
Something else that cuts the time down is there is no pre-cooking or frying of any other foods before loading the pizza. The bacon goes directly onto the pizza and as much I love tomato sauce slow cooking it was also wonderful to just get the pizza done without cooking anything. For a tomato based pizza having a jar of homemade pizza sauce in the fridge is always an advantage in terms of fresh food for your family.
HOW TO MAKE FLATBREAD PIZZA
I used my stand mixer to do this but wait...no stand mixer, hear me out because you can still make it. Your next best bet is a food processor? No? Okay a bowl and a wooden spoon? I thought so, yes! But wait....you can even make this dough right on your kitchen counter with your hands, it's crazy 🙂 Just how easy this flatbread pizza is to make, love it! So there are no excuses.
- Mix the dough ingredients together in the bowl of your stand mixer or by hand/bowl and wooden spoon.
- Set your mixer to a low setting to get it all combined or use your hands to knead it together. Even though this dough was in a mixer I've always loved doing this by hand and if you follow me on Instagram you already know that :)!
- Get the dough into a bowl, cover and let it rise for 30 minutes. If you have more time then you can leave it for another 30 minutes. It should double in size. Sometimes it rises and it doesn't necessarily double, it just rises a bit. See the images below.
- Cut the dough in half, and then flatten the two halves. Use a rolling pin to roll the dough out and make sure it's quite thin.
- Add your toppings and bake on high heat for a about 12 minutes.
DOUGH RISE
This dough rose beautifully and the rise time was sufficient. Had I left it longer it would've doubled even more but honestly for this pizza it was ample time! Perhaps I've gotten spoilt with a huge dough rise but this is no yeast pizza and was absolutely perfect!
FLATBREAD vs NAAN vs WRAPS vs FLATBREAD PIZZA
Where do I begin? I would tell you to do a Google search but I'd rather not because you might end up more confused than before just as I did. Bottom line, it's not a chalk and cheese situation it's more a situation of blurred lines and no real substance. We are living in 2021 where everything has been re-tweaked, shaped and re-invented where most recipes have lost their authenticity and the same with flatbreads.
- Naan Bread - usually made with yogurt to give it a softer texture and served with curry (or eat as a snack with pesto????So good!) Also a flatbread. I know right? Okay moving on...
- Pizza - a dough made with yeast to rise
- Flatbread - a quicker way to make pizza or just flatbreads for various dips and filling or even quick and easy wraps! Or turn it into a pizza by simply adding your favorite toppings. Remember that just because flatbreads are meant to be a no yeast, no kneading dough doesn't mean they can't be made with yeast.

Flatbread Pizza
Ingredients
- 1 ½ cups bread flour
- 1 ½ cups cake flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- ⅓ cup oil
- 1 cup warm water
Toppings
- 1 fresh tomato sliced
- , fresh basil, handful
- Salt & Pepper
- Streak bacon about 6 pieces
- 1 cup Mozzarella cheese
Instructions
- Get all the ingredients (except the water) into the bowl of your stand mixer with the dough hook attached.
- Start the mixer on speed 1 and gradually add the water.
- Mix for 1 to 2 minutes or just until the dough has come together.
- Place it in a plastic bowl with a little flour underneath and around and then leave it covered for 30 minutes.
- Meanwhile get your toppings prepared and halfway through get the oven onto 220 C. Use a pizza baking tray, pizza stone or a regular baking tray. Flour the base of the pan.
- Use a rolling pin to roll the dough out. If you're using a pizza tray then use that as your guide to make it round. Otherwise, roll it into any shape to suit your tray.
Toppings
- On the pizza base, add with cheese, sliced tomatoes, slightly roll the streaky bacon and place randomly, season with salt & pepper.
- Place less than a handful of basil leaves with a drizzle of olive oil, season and spread randomly across the pizza. (They will bake in the oven to a darker color with loads of crunch) Add a little more cheese but don't entirely cover the toppings.
- Bake on the middle rack for 10 to 15 minutes. Check on 12 minutes, it might just be ready.
- Give it a minute to cool before sliding onto a wire rack to cool completely. Slide not life, the crust is thin and it could crack if you're not gentle.
