Flavorful, spicy tender and insanely good Chicken Bites filled into a wrap and baked till golden brown. These are sincerely the best chicken wraps you'll ever taste! Unless you prefer something less spicy with a mascarpone filling instead of basil pesto. Either way, this is delicious food.
We all want something different to eat on the weekend as opposed to more substantial meals like Lasagna Rigatoni Pasta Bake (even though incredibly delicious!) they do require a little more hands on.
Chicken bites are easy to make with little to no effort. You can also adjust the recipe to best suit your own family. The versatility allows you to add less, more or no chili making sure that your family can enjoy them too! When you make these chicken bites and you also want everyone you're making them for to eat them. Not only that but to enjoy them and thankfully you can do that with this recipe. Don't like chili? Omit it. Want more chili add it and think you have the stomach for these quantities, go for it!

After making this Ricotta Cheese Balls with Sauce (Polpetta di Ricotta al Sugo) there was no getting away from the Calabrian inspiration and that took me back to the creation of our Calabrese spice. How To Make These Spicy Chicken Bites

Chicken Cut the chicken breasts into bite size cubes and add the yogurt. If you have time leave it in the fridge for 10 to 30 minutes but you don't have to! You can also continue straight ahead with the rest of the recipe. Depending on time I sometimes leave it for 15 minutes, 30 minutes or no minutes. Versatility that I love! This chicken bites recipe always come out delicious!
Yogurt Use whatever plain white yogurt you have. Add the yogurt into the bowl, mix with the chicken and set it aside while you prep the other ingredients. I love the creamy texture that the yogurt gives the chicken.
Wraps Store bought wraps and use whatever your preference is, white, wholegrain etc. Making your own wraps is also an option if you want to do that.
Seasoning Our Calabrese spice is made with a spicy and hot blend of freshly dried vegetables and spices so something equally fresh and organic will work.
As soon as you add the rest of the ingredients you can see the flavors transform right in front of you!
Lemon Juice Fresh lemon juice is the best in a chicken recipe and when called for it always delivers some acidity, freshness, flavor, vibrancy and will help tenderize.
Garlic I must admit that I don't always use garlic in my recipes, some call for it and some just don't. It depends because sometimes a recipe doesn't need it, besides there are many other herbs and vegetables to depend on for flavor especially with an exceptional spice collection!
Harissa Well well well, I love this stuff, wow! The vibrancy, taste and texture is simply amazing and anything you add it to changes, completely. I watched as it changed the face of the cubed chicken when I added it. Here's the thing, you really don't need to add it. These spicy chicken bites will still be incredibly delicious ether way especially if you have our Calabrese spice.
Butter I couldn't resist a little blob of butter just before baking for the added flavor profile. I also melted some and brushed that over the top of the wraps, talk about a treat!
How To Make This Recipe
Lay the chicken bites onto a baking tray. The baking paper is completely optional because the chicken bites bake really well without it. Either way you do it just make sure to collect the beautiful pan juices after!

At this point, feel free to add little bits of butter all over the chicken before you bake it. I left the butter out because I add it later when baking the wraps.
Bake in a preheated oven on 220 degrees C for 15minutes. If necessary turn the stove to grill for 2 minutes to brown the chicken a bit.

What would you like to serve these chicken bites with? Chicken and potatoes are good together, mashed or oven baked both work.

Tips and Suggestions
Spices Adjust the spices and seasoning levels so if your family cannot have very hot omit the harissa paste or use less of both the harissa paste and the Calabrese spice. The point is for everyone to enjoy it.
Alternative If you don't have our Calabrese spice you can add smoked paprika. It's by no means the same in taste, aroma and texture but will give you a level of heat and smokiness.
Chicken Try to spread the chicken out and not overlap them so that all the pieces can cook evenly.
Butter Adding the pieces of butter before baking is optional but strongly suggested.
Herbs It's always a good idea to add fresh herbs into your food or use them as garnish. It doesn't have to be just parsley, you can combine a mix of fresh chopped herbs. Use parsley, chives and green onions for example.
Sprinkling herbs over the chicken bites gives them that alive with green look 🙂
Want to reheat?
Add a little liquid so they don't dry out. Water or stock.
What I love about left overs is that there's always a new opportunity to create a different taste. The left overs from this Ricotta Cheese Balls with Sauce (Polpetta di Ricotta al Sugo) made the perfect leftovers by adding a dash of cream into the sauce which totally transforms the taste.
Recommended Recipes
Spicy and Easy Chicken Bites
Ingredients
- 4 wraps
- 4 chicken breasts cubed
- ½ cup yogurt
- 2 tbsps Calabrese spice
- 2 garlic cloves minced or finely chopped
- 1 shallot or ½ red onion diced
- 1 tbsp. olive oil
- salt and pepper to taste
- 1 fresh lemon juice
- 2 tbsps. unsalted butter one melted
- 1 tbsp. chopped parsley chives or green onion and more for garnish
Optional but suggested extras:
- basil pesto
- sour cream
Instructions
- Preheat the oven to 220 degrees C and get an oven tray out, spray with cooking spray.
- Add the chicken cubes to a large bowl and mix together with the yogurt. Set aside in the fridge and prep the other ingredients.
- Chop the shallots and garlic cloves.
- Cut the butter into very small cubes.
- Return the bowl with the cubed chicken and yogurt and add the rest of the ingredients: your choice of herbs, shallots, garlic, fresh lemon juice, Calabrese spice and salt & pepper.
- Spread the marinated and seasoned chicken cubes on the sheet pan and bake on 220 degrees C for 15 minutes or until soft and tender and cooked through. Don't leave them longer than 15 minutes because they're going back in the oven!
- Generously fill the wraps with the chicken and fold them by bringing in the two sides and bottom. Hold them together with a skewer so the chicken doesn't fall out. Brush all over with melted butter and add a small piece of butter over the chicken and then return to the oven for 4 to 5 minutes on grill.
- Serve with a dollop of basil pesto, sour cream and garnish with fresh herbs.
